Hearty Turkey Chili 2 pounds ground turkey 1 cup chopped onion 1 large clove garlic, minced 1/3 cup finely chopped fresh parsley, optional 2 cans (16 oz. each) tomatoes (with juice), cut up 1 can (8 oz.) tomato sauce 2 cans (15 oz. each) kidney, pinto or pink beans, drained 1 green bell pepper, seeded and chopped 1 tablespoon chili powder, or more to taste 1 teaspoon ground ***in, optional Freshly ground pepper to taste Morton Lite Salt Mixture, to taste, optional In a heavy, 4-quart Dutch oven sprayed with non-stick spray, stir-fry turkey, onion and garlic over high heat until browned. Drain fat, if any. Stir in remaining ingredients. Simmer, covered, for 2 hours. Stir occasionally. Crockpot Beef Stew 1 pound white potatoes, peeled and quartered 1 medium onion, roughly chopped 1 1/2 cups sliced carrots 8 ounces sliced mushrooms 2 stalks celery, sliced 3/4 pound lean stewing beef, trimmed 1 tsp dried mixed herbs 1 bay leaf 1/4 cup finely chopped fresh parsley 2 tbsp cornstarch mixed in 1/4 cup water/broth 3/4 cup fat-free, low-sodium beef broth 1/4 cup red wine Place potato pieces in the bottom of a 4-quart crockpot, followed by other vegetables. Add beef on top. Sprinkle herbs and add bay leaf. Add cornstarch mixture to broth and pour over meat and vegetables, followed by the red wine. Cook on low for 6 hours. Serves 4-6 Per Serving: Calories 218, Calories from Fat 39, Total Fat 4.5g (sat 1.3g), Cholesterol 51mg, Sodium 106mg, Carbohydrate 22.5g, Fiber 4.9g, Protein 22.2g

Thanks guys for the recipes and the web sight. The doctor jumped all over him and I went through my cupboards and got rid of all the bad stuff ... but oh so tasty . I went to the grocery store and stocked up on alot of vegatables and some fruts. Alot has to do with proportion control which is hard for him. We went to a christmas party and I loaded his plate with raw veggies. He couldn't have any cantelope. Bad for diabetics. Who knew??? Anyways, thanks again and any more recipes are appreciated.

Cornflake Baked Chicken 4 skinless, boneless chicken breast halves 1 cup French dressing 1 1/2 cups cornflakes cereal crumbs Preheat oven to 350 degrees F. Place the dressing in a shallow dish or bowl for dipping. Do the same with the breadcrumbs. Dip the chicken breasts, one at a time, in the dressing, then in the breadcrumbs to coat. Place chicken in a lightly greased 9x13 inch baking dish and bake in the preheated oven for 25 to 30 minutes. Lemon BBQ Chicken 2 teaspoons Worcestershire sauce 1 teaspoon grated lemon zest 1 teaspoon salt 1/2 teaspoon dry mustard 1/2 teaspoon dried oregano 1/2 cup fresh lemon juice 1/2 cup olive, canola, or corn oil 1 green onion with green top, chopped 6 chicken breast halves, or 6 legs and 6 thighs (2-1/2 to 3 pounds) Mix the Worcestershire sauce, lemon zest, salt, dry mustard, and oregano in a small bowl. Gradually stir in the lemon juice, followed by the oil and chopped green onions. Brush the mixture over the chicken pieces. Cover and marinate in the refrigerator for at least 2 hours. Prepare a charcoal grill. Remove the chicken from the marinade and place skin side down on the grill. Set 3 to 6 inches from charcoal that has reached the light gray ash stage. Cook 30 minutes for breast halves and 40 minutes for thighs, turning every 10 to 15 minutes. I need some good recipes for a diabetic. We haven't been eating right and we have got to get back on track. Does anyone have some good tried and true recipes that my hubby will enjoy. Thank you.
