This is the closest that I have found:
Ranch Chicken Casserole Ingredients
4-5 boneless chicken breasts, cut into chunks
1 family size can cream of chicken soup (condensed)
Chopped onion (optional)
16 oz. sour cream
2 packets Ranch dressing mix
1/2 box spiral pasta
Directions
Preheat oven to 350 degrees. In a 9x13-inch baking dish, mix sour cream, chicken soup (undiluted), onion and ranch mix. Add chicken slices and coat. Bake for approximately 30-35 minutes. Meanwhile, boil pasta, drain and rinse. Spoon sauce and chicken over pasta. Top with cheddar cheese and bake until cheese is bubbly.
You can also add this topping for a crunchier top:
Mix 1 C cup of cornflakes (slightly crushed, but not to crumbs) with 2 T melted butter. Put this on the casserole and top with shredded cheddar cheese. Bake an additional 10 minutes.

I have wanted that K&W recipe for years and can't find it anywhere. It is more of a white, creamy casserole with true Ranch Dressing. The King Ranch Casserole is more of a spicy recipe. It is very good though. Wilkeshoney made it for us at a cooking class and it was delicious. I have made it several times since then and it is one of my favorites.
I think the K&W one has ranch dressing and mushroom soup but not sure what else is in it. It sure is good though.

chicken ranch casserole like the K&W cafeterias. By the way you describe your dish, it may be a variation on the King ranch chicken casserole.
King Ranch Casserole
1 chicken, cooked and cubed 1 can cream of chicken soup 1 can cream of mushroom soup 1 can chicken broth 1 can Rotel tomatoes 3 c. grated American cheese 1 pkg. tortillas, cut fine or in small pieces 1 onion, cut fine
Place 1 layer of meat, 1/2 of sauces, 1/2 of tortillas and 1/2 of cheese, then repeat this with cheese on top. Bake at 350 degrees for 1 hour in 3-quart pan. This can be cooked and frozen for a later date.
