grannynanny, you keep talking like that and I'm going to have to come up there and steal your hubby's pie. LOL!!! I now have a craving for coconut pie.

Happygift, add some more flour so the pie will slice easier and I use the canned coconut because he likes it better. I save about 2 tablespoons of coconut to put on the top of the meringue to brown.

Because my husband's birthday is next week and he loves coconut cream pie, I just remembered that I use this same recipe for the pudding in the pie. Just add coconut.

Those were the days, my grandmother always let me lick the pot and spoon when she made the banana pudding. It was always warm and yummy.

Happy, I had to hunt. I don't make this anymore because we like the sourcream one better and it last. But I do like this pudding. Licking the pot and spoon is the best part.

BANANA PUDDING

2 cups milk
3 egg yolks slightly beaten
1/2 cup sugar
2 tablespoons flour
1 teaspoon vanilla
1 box vanilla wafers
4 bananas

Mix flour and sugar very well, add milk and egg yolks and bring to a boil and cook until thickened. Then add vanilla. Line baking dish well with vanilla wafers and slice bananas on top of wafers. Put about 1/2 of filling on top of bananas. Continue until all is used.

Meringue

3 egg whites, pinch of baking powder, 1/2 teaspoon water and 3 teaspoons of powdered sugar. Beat egg whites until somewhat stiff. Slowly add other ingredients. continue beating until stiff.

Top pudding with meringue and bake 375 until golden brown.

Brings back memories of my grandmother's homemade banana pudding. I can remember her making it for gatherings when I was growing up. I always had to get some while at the gathering or there wouldn't be any left by the time we got back home.
She always baked a mereingue (sp?) on top of hers. YUM YUM YUM!!! Good eating.

Make the pudding below and just add your bananas and vanilla wafers.

Vanilla Pudding
Ingredients:

3/4 cup granulated sugar
4 Tablespoons Clabber Girl Cornstarch
1/4 teaspoon salt
3 cups milk
4 egg yolks, slightly beaten
4 Tablespoons margarine or butter, softened
2 teaspoons vanilla extract
Instructions:

Combine sugar, Clabber Girl Cornstarch and salt in a heavy saucepan; stir together with a wire whisk until thoroughly mixed. Continue to whisk, adding the milk by droplets at first, then in a continuous stream. Whisk in egg yolks, stirring vigorously until blended.


Over medium heat, cook the mixture, stirring constantly until it boils. When the mixture reaches a full boil, reduce heat to low and continue cooking and stirring for 3 minutes. Remove mixture from heat; beat in margarine or butter, and vanilla.


Cover the entire surface of the pudding with plastic wrap and allow to cool for 15 minutes. Pour into individual dessert dishes and chill.

The cooked is the best recipe .It is so good warm out of ther oven.

Isn't this recipe still on the box of vanilla wafers? This is the cooked method that you want.
