They recalled it on the mountains but now is back. I asked why and they said it had to meet curtain restrictions but they have gotten it back up here. Lowes sells it and also I used fresh [harder to do but was good]

Just for everyone's information....I just got back from Food Lion in Millers Creek. Frozen coconut has been recall. There was none available.

once you try this you won't try another coconut cake!!!! Easy coconut cake 1 box white cake mix 1 -12 0z pkg frozen coconut 1 16-0z sour cream 2 cups sugar, and 1 8 0z cool whip mix cake according to package I used the yolks Bake in two layers. When cool split to make four. mix coconut [save 1/4 cup] sour cream,and sugar [save 1/2 cup of this mixture] Spread the rest between the layers. Mix the saved coconut mixture and cool whip, spread on top and sides of cake. refrigerate the cake dish at least over night. Can be fixed 2 days before serving. Can use maraschino cherries welled drained to decorate the top. my husban can't wait to eat it. The longer it sets the better. Enjoy Liz

This is a really good and easy cake to make. I use a white cake mix instead of the yellow and I used the frozen coconut instead of the flaked. It's delicious!!!!1

Coconut Cake
1 yellow cake mix
1 can Eagle Brand milk
1 can cream of coconut (may find where mixers are for alcoholic beverages)
1 lg. (9-10 oz.) carton Cool Whip
1 pkg. frozen coconut or flaked (12 oz.)
Prepare cake mix according to directions.
Bake in 13 x 9 inch pan.
Remove from oven.
Prick with a fork and pour a mix of 1 can cream of coconut and 1 can
Eagle Brand milk over cake. Let cool.
Mix Cool Whip and coconut.
Spread on cooled cake. Refrigerate. Serves 12.

I would love a recipe for a white iced moist coconut cake. I also was wondering how and what kind of filling you can put in cakes. I have heard of people injecting a cream filling in the middle. How do you do that and what would be a good cake and filling to do this with?
