Real Cheesecake

A friend of mine gave me this cheesecake recipe several years ago. It is her own family recipe, and it makes the BEST EVER cheesecake!

FAMILY SECRET CHEESECAKE

1 box Zwieback Toast (in baby food aisle), Crushed
1 stick butter, melted
3 - 8 oz. pkgs cream cheese, room temperature
4 eggs, room temperature
1 cup sugar
1 teaspoon vanilla

Preheat oven to 375 degrees
Mix crushed Zwieback and butter together. Press into bottom of springform pan.

Beat cream cheese, adding one egg at a time, until fluffy. Gradually add sugar, then vanilla. Mix thoroughly. Pour cheese mixture over crust. Bake for 35 minutes. Remove from oven and cool for 10 MINUTES ONLY, NO LONGER!!!
While the cheesecake is baking, mix up the topping

TOPPING:

1 pint sour cream
1 cup sugar
1 teaspoon vanilla

Beat together for 2 minutes at high speed
Pour on top of cheesecake after coolng for 10 minutes.
Bake for EXACTLY 6 MINUTES.

Remove from oven, cool completely and serve.

HINT: You can also add a bag of chocolate chips to the cheesecake mixture for chocolate chip, or melt them before adding them for a great chocolate cheesecake!

Easier than the no-bake kind, and I'll bet that once you have this one you'll never go back!

Ingredients

2 - 8 oz packages of cream cheese (I use the low-fat kind that comes in the little tub)
1/2 - cup sugar
1/2 - tsp vanilla
2 - eggs
1 - graham cracker pie crust (6 oz) *
1 - can of your choice of fruit topping (I use cherries)

Directions

Preheat oven to 325. Beat cream cheese, sugar, and vanilla with electric mixer on medium speed until well blended (3-4 minutes). Add eggs; mix just until blended.

Pour into crust.

Bake for 40 minutes or until center is almost set. Cool, then refrigerate for at least 3 hours (I usually let it cool overnight). Add fruit topping just before serving.


* Homemade Graham Cracker Crust (optional)

If you don't want to buy a regular crust, here's a recipe for an easy, tasty crust from scratch.

Ingredients

1 1/2 cups graham cracker crumbs (about 12 crackers)
2 - Tbsp sugar
6 - Tbsp melted butter

Directions

You may want to put the cracker crumbs in a processor to grind them up, otherwise they may be too chunky. I will usually just put the crackers in a large bowl, then use the palm of my hand to crush them to a fine powder.

Preheat oven to 350° F. Combine all of the ingredients in a medium bowl. Press into the bottom and sides of a 9-inch pie plate. Bake until set and golden, about 8 minutes. Cool completely on a wire rack.
