HAMBURGER PIE

1 LB GROUND BEEF
1 CAN CUT GREEN BEANS (DRAINED)
1 CAN TOMATO SOUP
MASHED POTATOES (BOX OR HOMEMADE)

BROWN BEEF AND DRAIN, ADD BEANS AND SOUP AND HEAT TILL BUBBLY. PLACE IN CASSEROLE DISH SPOON MASHED POTATOES ON TOP AND BAKE AT 375 FOR ABOUT 30 MINUTES. MICROWAVES EASILY FOR LUNCHES. CHEES ON TOP IS OPTIONAL

CORN BREAD PIE

1 LB GROUND BEEF
I CAN TOMATO SOUP
1 CAN WHOLE KERNEL CORN


BROWN BEEF AND DRAIN, ADD SOUP AND CORN AND HEAT. PLACE IN CASSEROLE DISH SPOON CORNBREAD MIXTURE ON TOP (EITHER BOXED OR HOMEMADE) BAKE AT 400 TILL THE CORNBREAD IS GOLDEN BROWN, MICROWAVES EASILY AS A LEFT OVER FOR LUNCHES

Tater Tot Casserole

Brown 1 1/2 lbs. lean ground beef with chopped onion, and a little pepper.
Drain any fat, and add one can cream of mushroom soup, 1 can drained green beans, and a dash of worchestershire sauce (optional). Mix well.

Place in casserole pan, and cover the top with a layer of frozen tater tots. Salt the top, and bake at 400 until the tater tots are cooked until golden brown and slightly crispy.

Everyone I know uses a different recipe for taco soup. Here's my take:

TACO SOUP
1 pound ground beef
one onion
1 packet taco seasoning
2 cans kidney beans, (one drained, one not drained)
1 can tomato sauce
1 can diced tomatoes with green chiles
1 can corn (drained)
1 bag tositos corn chips
1 bag shredded cheese, your choice what kind

Fry the ground beef with chopped onion in frying pan. Use lots of salt and pepper. Add packet of taco seasoning to the beef when it is almost done.

In crockpot, pour in all your canned items and mix with beef mix.. cook on high for a few hours or until you are ready to devour. In bowls, put some corn chips in the bottom, with some cheese in there as well.. then dip some taco soup out into it. Top with even more cheese and watch everyone go back for seconds lol.

Taco Soup
2 pounds lean ground beef
1 small onion, chopped
2 (3 to 4-ounce) cans green chilies
1 (16-ounce) can pinto beans, drained
1 (16-ounce) can lima beans, drained
1 (16-ounce) can whole kernel corn
1 (16-ounce) can kidney beans
3 cans chopped tomatoes
1 package ranch salad dressing mix
1 package taco seasoning
1-1/2 cups water (or liquid from drained cans)
Dump everything into a crock-pot and let cook until
beans are tender. (Set on low for 8 hours or so.)

Hormel has some of the best pot roast to be pre prepared that i have eaten. u will find it in the food section along with the lunch meats. all you do is nuke it for 4 minutes and you have pot roast. great for sandwiches or add a vegetable and you have dinner instantly. i take it to work often.

You can't go wrong with buying a few boxes of FREEZER bags... I always store spaghetti in the freezer.. I am a huge pasta fan by the way :) If I don't remember to take down a bag in the morning, I drop it into a sink of hot water to thaw it a little, then just dump it into a sauce pan and heat it right up. I keep extra spaghetti sauce in a tupperware bowl in the fridge (it keeps for a LONG time) because pasta usually dries out. Add LOTS of cheese ;)

Hmm.. taco soup is another option.. let me know if you are interested... I can't remember if I have posted it before or not. For that matter, ANY kind of soup stores well in the freezer.

You could divide a pound of beef into 4 hamburger patties, preseason it, and freeze.. just be sure to take down a pattie and put in fridge before you go to work.

When you have extra time, you can check out www.allrecipes.com. They have a search feature where you can type in some ingredients that you need to eat before it goes bad.. chances are it will find a recipe for you. They also have a 30-minute-meals section you might want to check out..

Corned Beef Hash
1 large onion (prefer Vidalia or sweet yellow) diced
8 large russett potatoes, diced
If you want a more oniony taste add more onion
Cook with water to cover until potatoes are done but still firm
(as for potato salad). Drain.
Salt and pepper to taste.
Add 1 large can Corned Beef, fork mashed and stir into
potato/onion mixture.
Bring back to scald.
(Careful, potatoes will scorch if you don't stir and watch carefully).
Served with steamed cabbage, brussells sprouts, broccoli, or
with steamed mixed vegetables.
Add Corn Bread as a good side
Delicious.

What are some very easy, quick recipes that have few ingredients but can keep in the fridge for a couple of days or better yet freeze well? I just signed a contract to work 5 twelve hour nights for the next 8 weeks. I need good food fast and simple without ordering or eating out.
