Broccoli Mushroom Quiche

1 cup sliced mushrooms
1 cup each chopped onions & broccoli
5 eggs
1/3 cup Miracle Whip dressing
1/3 cup milk
1 cup shredded sharp cheddar cheese
1 frozen deep dish pie crust 9 inch

Preheat oven to 375 degrees. Place vegetables in skilled sprayed with cooking spray; cook on medium heat 5 minutes or until vegetables are tender, stirring occasionally. Remove from heat, set aside.

Beat eggs, dressing and milk in bowl with wire whisk until well blended. Stir in vegetable mixture and cheese. Pour into pie shell. Place pie shell on baking sheet.

Bake on sheet 40-45 minutes or until center of quiche is set and top is golden brown. Let stand 10 minutes before cutting into slices to serve.


Hamburger Quiche

2 unbaked pie shells
1 lb of grated cheddar cheese
4 eggs
2 cup whole milk
1 lb cooked and drained ground beef
1/2 small grated onion
pinch nutmeg
salt and pepper to taste

Sprinkle 1/4 grated cheese on bottom of pie shells. Mix 1/2 cheese, eggs, milk, ground beef, nutmeg, salt and pepper. Pout into pie shells. Top with remaining cheese. Bake at 375 degrees for 45 to 60 minutes or until knife come out clean. Freezes well. For a nice substitute use ham and swiss cheese.


Tomato Pie

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 chop green onion
1 9 inch prebaked deep dish pie shell
1 cup mozzarella
1 cup grated cheddar
1 cup mayonnaise
salt & pepper

Preheat oven to 350 degrees.
Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes
Layer the tomato slices, basil and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly brown. To serve, cut into slices and serve warm.

Quiche Lorraine

1 9 inch unbaked pie shell, deep dish
8 slices of bacon, diced
1/2lb swiss cheese, shredded
1 T. flour
1/2 salt
Dash nutmeg
3 eggs, beaten
1 3/4 cup milk

Bake shell in preheated 450 degree oven for 5 minutes or until light brown. If using a metal pan, bake at 425. Set pie shell aside. Reduce oven temperature to 325 degrees for pie plate, 350 for metal pie pan. Fry bacon until crisp, drain and crumble. Reserve 2 tablespoons bacon for trim. Place remaining bacon in pie shell, add cheese. Combine flour, salt, nutmeg, egg and milk and pour over bacon and cheese. Sprinkle with remaining bacon. Bake according to temperature about 35 to 40 minutes or till almost set in center. Let stand 10 to 15 minutes before cutting. Serves 6.

Spinach Quiche

1 deep dish pie shell
1/2 cup chopped onion
6 slices of bacon, chopped
8 eggs
1/2 cup sour cream
1/2 cup half and half
1/4 teaspoon salt
1/8 teaspoon white pepper
dash of nutmeg (optional)
3 cups lightly packed chopped fresh spinach
2/3 cup shredded mozzarella cheese
1/2 shredded swiss cheese

Line unpricked pie shell with double thickness of foil Bake in 450 degree for 8 minutes. Remove foil. Bake for 4 to 5 minutes more or until pastry is set and dry. Remove from oven. Reduce oven to 325 degrees.
In large skillet cook onion and bacon until onion is tender and bacon is crisp. Drain on paper towels. In medium bowl beat eggs slightly with fork. Stir in sour cream, half and half, salt, pepper and nutmeg. Stir in onion mixture, spinach, and cheeses. Pour into pie shell and bake for 45 minutes or until set in center. Let stand for 10 minutes before serving.


Vegetarian Quiche

1 deep dish pie shell
1/2 cup shredded swiss cheese
1/2 cup shredded cheddar cheese
1/2 cup shredded carrot
1/2 cup green onions
1/3 cup green pepper
1 tablespoon of plain flour
4 slightly beaten eggs
1 1/2 cups half and half
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder

Line pie shell with double thickness of foil Bake at 450 degrees for 8 minutes. Remove foil. Bake for 4 to 5 minutes for until shell is dry and set. Remove from oven. Reduce temperature to 325. Toss together swiss cheese, cheddar cheese, carrot, green onions, green pepper and flour. Sprinkle mixture over the bottom of the pie shell. In medium bowl stir together eggs, half and half, salt, pepper, and garlic powder. Pour egg mixture into shell. Bake in the 325 degree oven for 35 to 40 minutes until set. Let stand for 10 minutes before cutting.
