Mash 2 avocados, add salsa, lime juice and fresh chopped cilantro. Yummy!

Thanks all. I found a guac salad on the food network- it was Rachel Ray. Real simple and it was good. Had never made it and didn't know what to expect.
The dip though- mashing the avacado and adding salsa- hmmmm- that would be good- and definitely simple...I will try that as I have one left.

Guacamole
4 ripe Hass avocados
1/2 cup finely diced sweet onion
1 medium tomato, seeds removed and finely chopped
Juice of 2 limes
1 1/2 teaspoons salt
4 tablespoons chopped cilantro (fresh coriander)
1 serrano chile, seeds removed and finely chopped (optional)
Squeeze the lime juice into a little bowl.
Mash the avocados with a fork and place in

a medium size bowl.
Add the lime juice, salt, chopped tomato,
cilantro, and if you like a little heat,

the chopped serrano chile.
Taste for salt and spice level.
If you like, add more salt or serrano chile.
Serve in a bowl with tortilla chips on the side for dunking.

Lime or lemon juice will keep it from turning brown too.

does the plastic trick really work? i hate it when it turn brown. your recipe sounds great and very easy.

Chunky Guacamole Dip

2 large avacados, about 1 lb, pitted, peeled and cubed
1 tablespoon fresh lime juice
1/2 teaspoon salt
Dash of ground red cayenne pepper
1 medium tomato, seeded, chopped
1 clove garlic, finely chopped
2 tablespoons finely chopped white onion
1 teasoon chopped fresh cilantro

In large bowl, coarely mash avacados, lime juice, salt and ground red pepper using pastry blender or fork.
Reserve 2 tablespoons chopped tomato for garnish. Stir remaining tomato, garlic and onion into avacado mixture. Spoon into serving bowl. Sprinkle top with reserved 2 tablespoon of tomato and the cilantro. Serve with tortilla chips.


NOTE: to keep guacamole from darkening in the refrigerator, press plastic wrap directly onto its surface. Do this before adding the garnish. Stir before serving.
