Ecfisher I have made those potatoes twice this week and they are so good. Thank you for that recipe!

Potato candy
One cooked potato
powdered suger
peanut butter

mash potato and powdered sugar together. roll out about 1/2 inch or less thick. let sit till firm spread peanut butter on potato mixture. roll up and cut into small pieces

peel potatos and cut in in small cubes. Mix a packet of Onion Soup mix with 1/3 cup of olive oil. Mix onion soup mix and potatoes until well mixed. Cook @ 350 for approx 30 mins or until brown.

Holly Taters
1/4 cup parmesan cheese
1/4 cup plain flour
1 teaspoon fried chicken seasoning mix
3/4 teaspoon salt
1/8 teaspoon pepper
put all ingredients in a shaker bag..wash and cut in wedges taters..shake in bag...place taters in a baking dish and drizzle margarine over them and bake in a 400 degree oven for 35-40 minutes
Chili-Roasted Potatoes
2 tablespoons water
2 tablespoons lemon juice
1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1 teaspoon chili sauce
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground ***in
1/4 teaspoon ground red pepper
4 red potatoes (about 1-1/2 lbs), each cut
6 wedges
1 red onion, cut in 6 wedges
1 red bell pepper, seeded and cut in 1/2-inch
strips
8 cloves garlic -- peeled
Preheat oven to 400º.
Combine first 9 ingredients in a large bowl; stir with a whisk. Add
potatoes, onion, bell pepper, and garlic; toss well to coat. Arrange
vegetable mixture in a single layer in a shallow roasting pan; bake at
400º for 35 min. or until potatoes are tender, stirring after 20
min.
Cowboy Mashed Potatoes
1 pound red potatoes
1 pound Yukon Gold (yellow) potatoes
1 fresh jalapeno pepper, sliced
4 cloves garlic
1 (10 ounce) package frozen white corn, thawed
1/4 cup butter
1/2 cup shredded Cheddar cheese
salt and pepper to taste
Place red potatoes, yellow potatoes, jalapeno pepper, and garlic cloves in a
large pot. Cover with water, and bring to a boil over high heat. Cook 15 to
20 minutes, or until potatoes are tender. Drain water from pot.
Stir in corn and butter. Mash the mixture with a potato masher until butter
is melted and potatoes have reached desired consistency. Mix in cheese, salt,
and pepper. Serve hot.
Fried Potatoes and Onions
4 red potatoes
1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, seeded and chopped
2 tablespoons olive oil
1 teaspoon salt
3/4 teaspoon paprika
1/4 teaspoon ground black pepper
1/4 cup chopped fresh parsley
Bring a large pot of salted water to a boil.
Add potatoes and cook until tender but still firm, about 15 minutes.
Drain, cool cut into 1/2 inch cubes. In a large skillet, heat 1 tablespoon olive oil over medium high heat.
Add onion and green pepper.
Cook, stirring often, until soft; about 5 minutes.
Transfer to a plate and set aside.
Pour remaining 2 tablespoons of oil into the skillet and turn heat to medium-high.
Add potato cubes, salt, paprika and black pepper.
Cook, stirring occasionally, until potatoes are browned; about 10 minutes.
Stir in the onions, green peppers and parsley and cook for another minute.
Serve hot
Potato Cakes
2 cups mashed ptoatoes
1 egg, beaten
1 tsp. salt
1/4 cup shredded cheddar cheese
1 Tbs. butter
In a medium bowl, mix together ptoatoes, beaten egg, salt, and
cheese. Melt butter on a large griddle at medium heat. Drop potato
mixture onto griddle 1/4 cup at a time. Flatten with a spatula to
1/2 inch thick. Fry approximately 5 minutes on each side, until
golden brown. Serve hot. Makes 3 servings.
Scalloped Potatoes
4 medium potatoes, peeled, sliced 1/4" thick
salt
fresh ground pepper
3 tbsp flour
4 tbsp butter or Smart Start
1 small to medium onion (optional)
1 1/2 whole milk or half and half (I personally use condensed milk)
Preheat oven to 350º
Butter or spray a 1 1/2 qt casserole dish
Cover bottom of dish with a single layer of potatoes
Sprinkle generously with salt, pepper, flour, paprika, and a few dabs of butter or margarine
Repeat until all potatoes are used.
Pour milk over potato slices until top is almost covered.
Dot with remaining butter or margarine
Bake for 1 to 1 1/2 hours or until potatoes are soft
Dice one small to medium onion and mix with potatoes if you like. (It's better that way.)

Cheesy Scalloped Potatoes.
Same as above except add 1 1/2 cups cheddar cheese and 1/2 cup parmesan cheese.
top completed dish with cheeses and bake
You can also make this in a crockpot by spraying crockpot with non-stick spray.
Cook on high about 5 to 6 hours, until potatoes are tender
Classic Potato Salad For 50

15 lb. potatoes peeled and cubed
4 C. mayonnaise
1 C. sweet pickle relish
1/4 C. prepared mustard
1 (4 oz) jar diced pimientos drained
2 T. salt
1 T. sugar
2 t. pepper
6 celery ribs chopped
8 hard cooked eggs chopped
1 small onion chopped
paprika and green pepper rings, optional

Place potatoes in 2 large kettles and cover with water. Bring to a boil. Reduce heat; cover adn simmer for 10-15 minutes or until tender. Drain and cool to room temperature .
In a large bowl combine the mayonnaise, relish, mustard, pimientos, salt, sugar and pepper. Divide the potatoes, celery, eggs and onion between 2 very large bowls; add mayonnaise mixture. Stir to combine. Cover and refrigerate at least 1 hour. Garnish with paprika and green pepper rings if desired.

Take several potatos cube them and put in baking dish. Cut up a onion add it to the dish. Put 1/2 stick of butter over top of potato and onion. Add a cup of water. Let this cook 1 hour or until potatos get soft. Put on thin strips of chicken breast sprinkle w/ salt,pepper, celery seed, paprika and whatever to your liking(Mrs Dash) maybe, cook another 20- 30 minutes or until done. Add shredded cheese cover the entire dish up w/ it. Serve. This is so good on a cold day. 1 dish meal. We love it. I call it cheesy potato chicken bake..

funny, why not make a big ol pot of potaot soup since it's getting cold outside?

Or, shred some up for homemade hash browns, or fix a tater salad, mash some up and fix tater cakes, a lot of possibilities.

peel a few and cube them , shred some cabbage , place in crock pot cover with water and start on high , take a kielbasa sausage (slice or cube it) fry it in a frying pan until almost done then add to crockpot ( frying before gets most of the grease out so it dosen't make your soup greasy ) about an hour before its done make a thickening agent with sausage grease and flour and add to crockpot turn to low .... about an hour or so make a pan of cornbread and get ready
