Crockpot Sausage Potato Soup 4 potatoes peeled and chopped (5 or 6 cups) 1 largel onion diced 1 lb. ground sausage browned and drained,sliced smoked sausage is OK 1 can Cheddar cheese soup 1 can cream of mushroom soup 1/4 cup water (+ or - )
Place potatoes, onion and browned sausage in the crockpot. Mix soups and water together and pour over the top. Cook on low for 8 hours. I check frequently because my crockpot cooks really hot and usually have to add more water to this to keep it from burning.

5 pds. taters, peeled & cutup as big and chunky as you like, boil till just done 12-16 oz. bacon, fried and well drained 1 med. onion chopped & fried in bacon grease,drain 1 can of cream of mushroom or cream of celery or 1 of each this will thicken soup add butter to your liking real simple recipe, but it will stick to your ribs

Here's one that I have made plus a really rich and delicious Cream of Kale soup receipe (Broccoli can be substituted for Kale but is not as good as the Kale soup.
Each is quick and easy. Great as a reheat next day or frozen and used later when in a hurry.
Chunky, Creamy, Cheezy Potato or Kale Soup That's Easy
6 medium regular or red potatoes
2 c water
1 medium chopped onion, finely chopped or 1 bunch scallions, chopped. Include tops.
1/4 c butter or good margarine
1/4 c flour (I personally use Argo corn starch but lots of folks don't feel comfortable using corn starch. Just disolve flour or corn starch into milk until well blended.)
1 tsp ground black pepper
1 can condensed milk
1/2 c half and half (omit and add an extra can of cond. milk if you wish.
1 c shredded cheddar or parmesan cheese (can substitute with can of cheddar cheese soup)
1 c diced ham (okay not to add ham if you don't care for it)
Directions: Peel and dice potatoes into 1/2" cubes or slice thinly if you prefer
Add potatoes to water in lg saucepan. Cook about 15-20 minutes until done.
Mash potatoes 3 times with potato masher. This will help in the thickening process.
Drain well and reserve a cup of this potato water. Add enough milk or water to equal 1 cup.
Add diced onions and butter to boiling water. Cook until onions are transparent. Stir while cooking so they won't scorch or burn.
Lower temperature to medium.
Add flour, season with black pepper and cook an additional 3-5 minutes. Careful or this will scorch.
Add potatoes and remaining potato water, and milk. Stir well from bottom and sides.
Add ham and cheese or cheese soup. Simmer on low for 30 or so minutes until hot and thick. Stir well and frequently.
If you need it this is a good time to salt to taste. ___
Cream of Kale Soup. (A traditional Portuguese Soup)
Make exactly same as potato soup above but substitute fresh, chopped kale or 1 10 oz box of frozen fresh kale (or broccoli cuts) for the potatoes. Don't add the ham unless you just particularly like ham flavor with kale.
I actually like to add 2 boxes of kale but my family does not care for that amount of kale.
This reheats well and freezes well.
