Creamy Parmesan Potato Soup 4 cups cubed potatoes 3/4 c. of chopped onion 4 1/2 c. of chicken broth 6 c. of milk 12 slices crisp cooked crumbled bacon 1 c. of grated Parmesan cheese 1/2 c. of margarine 1/2 tsp. of dried basil 1/4 tsp. of celery salt 1/4 tsp. of onion salt 1/4 tsp. of ground black pepper 1/4 tsp. of dried thyme 1/2 c. of all-purpose flour 1/2 tsp. of seasoning salt 1/4 tsp. of sage First you want to boil potatoes in boiling water until they are tender. Now in a soup pot, saute onion in butter until soft. Now add in flour and spices. Slowly add in broth, stirring. You will want to let this come to a boil, letting cook for around 2 min. Next you will add the potatoes, and return to medium heat approx. 10 min. Finally, add in milk and cheese, letting cheese melt. Sprinkle bacon and serve!

5 pounds taters
1 pound crispy fried bacon crumbled
1 medium to large onion chopped sauteed
tsp garlic powder optional
boil taters add bacon and onion...add can of evaporated milk and let this simmer 10-15-minutes
salt and pepper to taste
that's my regular recipe...
here's the quicky tater soup recipe
5 pounds boiled taters
1 can cream of mushroom soup
can of evaporated milk
1/2 stick of butter
salt and pepper to taste...

My potato soup is simple and, I think, delicious.
5 to 6 potatoes, peeled, sliced long ways, about 3/8" thick. Then cut across so that pieces are about 3/4" thick.
1 large, sweet onion, quartered, then each half cut in half,
1 medium to large carrot, scraped and then shredded,
1/3 stick of salted butter or margarine,
Place all in a large pot, add water to cover, and add 1 tbsp canola oil,
add 2 tsp salt,
1 tsp ground, black pepper, to taste (I don't use black pepper if I am going to eat it as I am allergic to pepper.)
Cook until onions are done and potatoes are done, yet still somewhat firm,
Add 1 can evaporated milk,
Turn heat to low, simmer, stirring often so mixture does not stick to pot.
Easy and delicious.
Some folks like to use leeks instead of onion, I don't think it adds much to the soup except is more expensive.
