Potato Salad

potato salad after i boil my potatoes, i dice my eggs, mayo, sweet salad cubes, diced onion and celery seed and about a table spoon mustard and mix. In the summer I use diced tomatoes out of the grden instead of mustard

boiled potatoes, boiled eggs, dill pickles, celery, onion, shredded chedder cheese, mayonaise, mustard, ranch dressing - mix well

I am not a very expierenced cook or anything but my potatoe salad always goes fast at reunions!
All I do is boil the potatoes cubes(with salt and butter, and just depends on how much you want to make as to how many potatoes you use)
about 5 boiled eggs
After the potatoes are soft I added mayo, the eggs, mustard salt and pepper
Sometimes I do put other spices in it like garlic it just gives it a kick that everybody loves! And I dont like pickels that much but if you do then add relish and it is the best! So easy! So good!

diced potatoes in large cooking pan, cook but not so soft, firm (depend on how many ppl u are going to feeding)
drain water out of potatoes
add can of small or large chopped pimentos, drain out of liquid
sweet cube pickles
4 to 6 boiled eggs, diced or chopped (i use pastry cutter, it's fast way to cut eggs)
add mayo, I prefer kraft but any will be fine

mix well, taste to see if it need more mayo but dont let it to be too dry and be sure it is wet enough and refrigrate.

I had been made them and brought them to my event. ppl love them so much. said it was very delicious.

Southern Style Potato Salad

3 lbs potatoes, peeled and diced (Idahos or chef choice)
1 C finely diced sweet onion
6 boiled eggs, diced
1/4 C shredded carrot (optional)
1/4 C green olives w/pimento (optional) or 1/4 C pimento
1 C Mt Olive diced sweet pickles
1/2 C diced celery (optional)
1/4 C diced bell pepper (optional)
1/4 C Yellow, prepared mustard
1 Tbsp salt
up to 1 Tbsp Black Pepper (optional)
1 1/2 C Dukes Mayonnaise
ground paprika to sprinkle on top (optional)

Other optional free foods are diced green pepper, celery, carrot, or celery seed. Add as you choose.

Boil potatoes until they are tender BUT FIRM (otherwise, you will have mashed potatoes)

Drain and cool with cold water, drain again

Add all other ingredients and lightly stir mixture to incorporate mayonnaise and other ingredients

Refrigerate until chilled then serve.

Weight Watchers Potato Salad

4 points

Recipe serves 4 generously (4 servings of 3/4 C, by measure)

1 1/2 lb red bliss style potatoes (scrubbed and ready to cook)
1/2 C scallions, chopped. (Include some of the tender tops)
1/4 C no fat Dukes Mayonnaise
2 tbsp apple cider vinegar
1 to 3 tsp chopped parsley (use fresh) If dried, reduce to 4 tsp)
1/2 tsp salt
1/4 black pepper, to taste
1/4 Hungarian sweet paprika (for color)

Place potatoes in large saucepan. Cover with water, bring to boil over high heat. Immediately reduce heat to medium and simmer until fork tender but firm. 20 minutes should do it unless potatoes are humongous. Drain and cool. Quarter potatoes when cool enough to handle comfortably

Fry 3 slices turkey bacon and crumble (or Hormel brand bacon bits)

Place potatoes in large mixing bowl, add bacon and onions.add all other ingredients, mix until blended. Refrigerate until cool.

Also, remember that bacon bits need to be warmed slightly in the microwave. 10 to 11 seconds for 3 tbsp. If you omit this step then bacon will not be as flavorful.

My mayo jar only had one recipe on it , and it is for sothern style catfish nuggets. A friend of mine was telling me that she had eaten potato salad that had sour cream in it and that it was very good.
