Potato Dumplings

I've never heard of potato dumplings. Sounds like this is something new I could try.

you must be good bushman because no one else knew what her recipe was to start with to know if it was different. lol

Potato and Dumpling , Spring Onion Soup
Serves: 4-6
2 bunches spring onions (scallions), trimmed
4 tbsp. vegetable oil
1 medium yellow onion, peeled and chopped
3 russet potatoes, peeled and cubed
4 cups chicken stock
salt and freshly ground black pepper
1. Cut scallions in half crosswise, dividing white and green parts.
Coarsely chop white parts and set aside. Finely chop green parts
and set aside separately.
2. Heat oil in a medium pot over medium heat. Add onions and
chopped white parts of scallions and cook, stirring often with a
wooden spoon, until soft, 8-10 minutes. Add potatoes and stock
and season to taste with salt and pepper. Increase heat to
medium-high and bring just to a boil. Reduce heat to medium-low
and simmer, stirring occasionally, until potatoes are soft, 30-35 minutes.
Add dumplings and cook 10 more minutes
Dumplings
3 eggs
1 1/2 cups water
2 cups Potato Flakes
1 1/2 cups flour
1 tsp salt
Mix together eggs, water, and potato flakes; let stand for 10 minutes. Mix in
flour and salt; turn out as you would bread; knead for a few minutes. Roll out
in ropes, about the diameter of a half dollar. Cut into lengths of about 3
inches. Place in gently boiling soup and boil for 10 minutes.
Serve with more green onions

Just wanted to know if anybody had a different way of making Potato Dumplings than the way i have made them...If so then ,Please ,share it with me...
