Potato cakes

I do mine the lazy way. Add dice onion, eggs, flour and milk. Stir well. Heat oil in frying pan and using a one-fourth size measuring cup, add potato mixture to pan ( like frying a corn fritter). Frying until well browned on both sides. Drain on paper towels. Enjoy! This is one of my families favorite.

One medium to large sweet onion, diced, to equal 1/4th the amount of potatoes (if you have green onions, all the better)

Flour, again, amount depends upon how many potatoes,

1 to 2 large eggs,

Evaporated (preferred) or whole milk, enough to mix potatoes, onions, and flour to the consistency of biscuit dough

Salt and pepper to taste.


Mix all ingredients, shape with hands or use large biscuit cutter,

Spray cookie sheet with Pam (or grease with butter, margarine, or oil.)

Place in freezer for about 30 to 45 minutes. This will keep them from separating.


Heat oil in large, thick skillet and slowly add the potato cakes. Don't crowd them.


Use a spatter screen If you have one as the grease will spatter on you and the stove if you are not careful.

Brown to a medium golden brown on one side and turn over. Brown other side and remove to a heat proof plate (put paper towels or brown paper on plate to absorb excess oil.)


Place in warm oven until all are cooked.


Serve at once.


They are great with cream gravy served on the side or with Heinz Chili Sauce.
