Does your son like meat loaf or stuffed peppers? If so, he will probably like these as well. Now, I can eat the aforesaid with rice but I personally would rather not have the rice. I'm just not that big a fan of rice.

You may want to consider making a slightly thicker version of your spaghetti sauce and serve it over rice instead of pasta. Consider Spanish rice. Very tasty, especially if he is into salsa.

Rice pudding with a nice lemon sauce or hard sauce is another good way to use rice.

Use rice in "stuffing or dressing."

Baked egg plant with rice is always good.

A mixture of white, brown, and wild rice is good with most meats and fish.

Shrimp Creole or Jambalya are other tasty ways to use rice. Don't forget the gumbo.

Chinese and Japanese, Vietnamese, Thai, and Hawaiian dishes are good choices.

One of the things I make for my son is shredded chicken breast combined with rice, half cup or so each of carrots and peas, and a thin gravy mixed into this. Add butter, salt and pepper to taste and is is a single dish entree'.

Goodness, over half the world uses rice as a primary staple. You should not have any trouble finding thoudands of ways to use the various rices.

Has anyone made porcupine meatballs? My little boy has decided he loves all sorts of rice and I'm trying to think or recipes I could put rice in that he might eat. He loves salsa too. He likes spaghetti and meatballs so I thought maybe he would eat these meatballs as well but I hate to waste ingredients on something that hasn't been tried out by someone. Thanks.
