From time to time I make dinner real simple as well (school, work, kids.. never enough time!). One of my good fall back recipes are: 1lb cooked ground meat (deer, beef, pork, etc), sauteed green beans & onions, over cooked rice with gravy. Simple, and kid pleasing as well.

South Of the Border
1lb hamburger meat
1pkg brown gravy mix
2 cans Mexican style tomatoes
1-2 T chili powder
1 tsp ***in
1 bag BBQ corn chips
Brown hamburger meat and drain. Add next 4 ingredients. Simmer 10 mins and serve over corn chips. We like sour cream on top!

Crown Casserole
1 lb. hamburger 1 can mixed vegetables, drained or 10oz frozen mixed vegetables 1/3 cup chopped green pepper 1 envelope brown gravy mix 1 1/4 cups hot water dash of garlic powder 1 large tablespoon mayonnaise 1 can biscuits
Brown hamburger and drain. Add next 5 ingredients and bring to a boil. Remove from heat and stir in mayonnaise. Pour into 1 1/2 qt. casserole dish. Flatten biscuits slightly and place around edges overlapping slightly. You can brush biscuits with mayo or butter if desired and bake in 375 degree oven about 15 minutes or until biscuits are done. Serves 4 - 6.

This and Seasoned Potato's will be great with BBQ ed Meatballs.
Cornbread Salad Bake you 1 box of jiffy corn bread mix, Baked in a flat shallow pan, cooled and cut into croutons 1/2 cup red onion chopped 1/4 green pepper chopped 1 clove chopped garlic 1 cup corn (drained) 1 chopped tomato (drained) 1 jalapeno ,If you like it 1 1/2 cups of bacon crumbled (1 jar of real bacon bits) Hidden Valley Ranch,Mix or bottled. Add until moist About 1 cup

Seasoned Mashed Potatoes 3 lb. potatoes peeled and quartered (about 9 medium) 2 (3 oz) pkg. cream cheese softened 6 T. butter softened 1/4 C. milk 3/4 t. seasoned salt 3/4 t. pepper 1/4 t. onion salt Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat, cover and cook for 15-20 minutes or until tender. Drain. In a large mixing bowl mash the potatoes. Add the remaining ingredients, beat until fluffy.

Barbecued Meatballs 1 egg beaten 1 C. crisp rice cereal crushed, divided 1 T. finely chopped onion 1/2 t. salt 1/4 t. pepper 1 lb. ground beef Sauce 1/4 C. packed brown sugar 3 T. ketchup 1 t. prepared mustard 1/8 t. ground nutmeg In a large bowl combine the egg, 3/4 C. cereal, onion, salt and pepper. Crumble beef over mixture and mix well. For sauce, in a small bowl, combine the remaining ingredients. Add 2 T. sauce to meat mixture, mix well. Shape into 1 1/2" balls. Place meatballs on a greased rack in a shallow baking pan. Brush with remaining sauce, sprinkle with remaining cereal. Bake uncovered at 400º for 20-25 minutes or until no longer pink.

I make that also, smalltownman...
Only I add green pepper (and onions), seasoned petite cut tomatoes and kitchen cut green beans. I also mix in a little sharp cheddar cheese and top it with cheese.

TEX-MEX CHEESEBURGERS...
Ingredients * 1 pound of lean ground beef * 1/3 cup of onions - minced * 1 tablespoon of ketchup * 1/2 teaspoon of chili powder * 4 ounces of shredded Mexican cheese blend * 1/3 teaspoon of ground pepper * 4 hamburger buns - toasted * 1 can of chopped green chilies (4 1/2 ounces) * 1/4 teaspoon of hot sauce (optional Mix together the ground beef, minced onions, ketchup, chili powder, shredded cheese, and the salt and pepper. Shape into four patties. In a non-stick, pre-heated frying pan, set to medium high heat, fry the burgers for 4 minutes on each side. Serve on a toasted roll with Tex-Mex Burger sauce. Tex-Mex Burger Sauce Stir together all ingredients. Cover and chill until ready to serve. Makes cup My family likes them very much.

Blue Cheese Stuffed Hamburgers
1 1/2 pounds ground beef 1/4 teaspoon salt 1/3 cup crumbled blue cheese 3 ounces cream cheese, softened 1 tablespoon country-style Dijon mustard 4 onion buns 1 ½ cups fresh mushrooms, sliced ¼" thick 2 medium onions, sliced 1/8" thick 1/4 teaspoon salt 1/4 teaspoon pepper 1 tablespoon Worcestershire sauce 4 slices ripe tomato
In medium bowl stir together ground beef, ¼ teaspoon salt and ¼ teaspoon pepper. Form into 8 large ¼" thick patties. In small bowl stir together blue cheese, cream cheese and mustard. Place about 2 tablespoons cheese mixture on top of each of 4 patties. Top each with remaining meat patty. Press around edges to seal. Place hamburgers in 10" skillet. Cook over medium heat, turning once, until desired doneness (12 to 15 minutes for medium). Place hamburgers on buns. In same skillet with drippings place mushrooms and onions; add ¼ teaspoon salt, ¼ teaspoon pepper and Worcestershire sauce. Cook over medium high heat, stirring occasionally, until tender (4 to 5 minutes). Meanwhile, place tomato slice on each hamburger; top with grilled mushrooms and onions.

My mom made a dish she called goulash.
It was macaroni, tomatoes and hamburger.
Boil the macaroni, brown the hamburger (add onion if desired), drain both and return to pot and add drained chopped canned tomatoes.
Sounds strange but is actually quite tasty!

Is what is in my fridge for tommorow, I don't wan't meatloaf, or hamburger helper...spaghetti or taco's.
Are there any new recipe's for hamburger?
