I'll try the sugar, but I don't want the tomatoes in pintos. Something just not kosher about that. :)

A spoon full of sugar helps the medicine go down. Helps keep acid levels down in tomatoe dishes. Also helps keep the gas out of beans. I was always taught to let the pinto's sit overnight in water to soften. Then let cook all day with some bacon, (3 or 4 cut in one inch strips) a large onion chopped up fine, and a can or 3 fresh tomatoes finely cut.

i always cooked them with alot of salt from the get go, then as they became soft i took a cup full out smushed it added them back to the pot and added alittle sugar makes it thicker. also used hillshire farms smoked sausage cut in thin slices for more flavor

I have another "pinto from scratch" question. I use refried beans in several tex-mex recipes and prefer Food Lion fat free brand. Does anyone know how to fix refried beans from scratch?

How to take the gas effects out of cooking beans.
This really works. Parboil the beans for about 10min. Drain, and rinse in cold water 2 or 3 times. Put in pot, crock, or stove, add some carrots, either baby carrots, or pieces of carrot. Cook the beans, and you can eat the carrots if you wish.
I know you have heard the potato thing. That does not work, but carrots really do. If I have to guess why, I would say the sugar content in carrots, but I really don't know. The par boiling, and rinsing is a must.

Bushman, I have tried a friend's 5 bean dish with the bacon, hamburger and onions. It was delicious! It had black and navy beans in it. Are the beans in the 15 soup dry, frozen or canned?
GrannyNanny, my favorite side with pintos is garden grown turnip and mixed greens. If I am not lucky enough to have any of those in the fridge or freezer then my second choice is coleslaw, then next potato salad. I've now eaten pintos all week, atleast a bowl a day. Oddly enough I've lost a few pounds this week. Reckon it's all the fiber in the beans? Or it could be the fact that I have taken down four Christmas trees and outside lights between our house and my parents house, LOL. In other words I've exercised more as well. I have to now admit on GW that I am addicted to "from scratch" pintos! Someone else who is a recovering pinto addict please help me. How do I stop? LOL, jk!

Kelly,,, try the 15 bean soup. Season with some Bacon slices when you start cooking them. They are with the pintos , in the dried beans. They cook up good

I think everyone has their "favorite" side to go with pinto's. Mine is potato salad and cornbread but hubby prefers coleslaw. What is your's?

Kelly , A bowl of beans with Chow`Chow,Onions and some fresh baked Cornbread. Make sure some of the meat you cooked them in gets in your bowl too.
So Good.

Ok folks, for a traditional New Years dinner I'm attempting a crockpot full of blackeyed peas "from scratch". After they are cooked I'll add a little frozen white corn. I just thought I'd ask you folks cause no one in our family has ever made them dried "from scratch" in the crockpot. Thanks for any advice and Happy New Year

Kelly ,,,I fix a crock pot full every new year .Sometimes i use hog jowls or a ham hock .Foothills in Arlington has both pretty cheap. After they are cooked I dip out a pint and mix a pint of kernal corn with them and serve with dinner. I like corn and black eyed peas mixed.
