Pinto Beans...."from scratch"

My favorite way takes two days and a crockpot. Go to a produce market and buy about 1 lb of pintos and a ham hock. When you get home wash the beans and look for rocks about 6 times or until the water is clean. Then get your biggest bowl and put the beans in it and fill all the way with clean cold water and sat aside until the next morning. You may want to stir them several times. Next put the hamhock in the c*ckpot and fill it with water. Turn it on low and forget it until the next morning.

The next morning take the hamhock out of the crockpot and sat aside to cool. skim all of the fat off of the water in the crockpot and put the beans only in the water that you cooked the hamhock in. when the hamhock is cool enough to touch, pull off all of the lean meat and add it back to the crockpot. It will look somewhat like chopped BBQ. Salt to taste. Cook on low until supertime. Stir as needed and you may have to add some more water. Just depends on how much soup you want.

I could google it and get all the "info" I need for this but I want real people's experiences. I want to make a pot of pinto beans from scratch. How much dried beans would I buy for about 4-5 big servings? What are your methods for cooking and seasoning them? What type or name pinto beans are best or are they all just pinto beans in that bin at the store? Thanks for your input!
