Pinto Beans...."from scratch"

I'm gonna do the blackeyed peas "from scratch" in the crockpot on New Years. I've never done the traditional thing with the turnip greens and peas, but I am looking forward to it. I'm with grimey, what makes the thick juice in the blackeyed peas?

Stirring the beans makes them thicker. The more you stir the thicker they get. Cooking a little longer also helps thicken them.

what makes the syrup/gravy in the pintoes and black eyes? mine turn out like beans in dirty water with no thickness to stick to a biscuit.

Black-Eyed Peas and Hog Jowl or Ham Hocks
2 pounds dried black-eyed peas
8 ounces hog jowl or 2 small to medium ham hocks
6 cups water water
1 large onion, coarsely chopped
1/2 teaspoon crushed red pepper
1/4 teaspoon sugar
salt, to taste
Pick over the peas and rinse well, then soak in cold water overnight.
Place ham hocks or hog jowl in large kettle with water,
bring to boil, and cook for 1 1/2 hours.
Drain peas and add to the hog jowl.
Add whole onion, crushed red pepper, sugar, and salt.
Add more water if needed to cover peas.
Cover tightly and simmer slowly 2 hours or until peas are tender.
Serve with hot cooked rice and cornbread.
Serves 8.

And the bean saga continues.... I bought a bag of blackeyed peas to put in the crockpot today. I usually just have the canned kind because my hubby doesn't eat those either. OK, who wants to give their rendition of how they fix blackeyed peas "from scratch" first?
shoot!! I forgot to get frozen white corn to go in them

This has been very interesting reading. The best pot of beans I ever cooked had a pack of brown gravy mix added, along with my olive oil,salt and sugar. Don't know why I did that....I just did and it turned out good.

"MY BEANS ARE ALL WASHED AND A'SOAKIN' sounds like a great title for a country song....LOL

I'm sending the pintos home with my Mom and Nanny today. I can't eat a whole crockpot of pintos alone, but I kept a bowl for myself. The baking soda worked!

Baking soda and some put a potato in them before cooking .
The after effects are a added benifit of beans ,they provide entertainment after you eat them.
I have been told if you eat some pineapple with them you can fart Hawaian LOL

I have never used baking soda. In fact, I had never heard of using it. Maybe with it and the grace of God, she won't explode.

KellyG...honey take it easy with those beans...I know there good and you put in the baking soda...hopefully it will help...but give them beans a couple of days...you know what I mean...to kinda work their way thru. it could be somewhat uncomfortable for you.
