I've cooked them in the crockpot before, but the soup never thickened up like it does when you cook them stove-top.

The vinegar works best of anything that I have found for the gas and it does NOT make your pintos taste like vinegar - you will never know you put it in there.

For the Best Beans.... Wash and look beans over.... PUT IN CROCK POT.... Put in Potato/table spoon of vinegar for gas (The peanut butter is to replace meat) not for gas... Put in a Piece of Pork Streak Lean meat (trim lean for healthy still tastes great) I trim almost all fat off!! add salt and pepper cover with water +2 inches then cook overnigt or eight hours on high You will not need to presoak!! then put on warm until you are ready to eat. You also can put jalapeno peppers in it!!!! (put these in at the begining if you like them with a little spice or at the end for a lot of heat) if you cook the peppers in from the beginning the peppers will be sweet. EAT WITH ONIONS AND CORNBREAD!!! (how you cook cornbread is a art in its own) YUM!!!

The main reason I eat pintos is so I can fart, why would you want to take the farts out?
Add a chunk of fat back and cook in a crock pot over night

My grandmother always looked the beans for any bad ones or rocks and then rinsed. She then put the beans in a pot with water only and power boil for about 30 minutes and then wash them and put back on with water, fat back or ham bone, salt and bring to a boil and then turn down and cook slow until tender. This is the way I was taught so thats the way I have always cooked mine too.

Pinto beans, good for your heart, the more you eat, the more you fart!! About the gas thing, I had never heard about peanut butter. I have tried putting a potatoe on top or adding a pinch of soda...still have the same problem...lol

This will be moved to the food section under home and life.
I never soak mine over night. Just look the beans for dirt and stones, rinse several times, drain, add to pot and cover with 3 times the volume of beans. Add a sweet onion, cut in half. Don't salt beans until near end of cooking. Some folks like to put a piece of ham, fatback, or 3 or 4 strips of fat bacon in the beans. I don't. I add 2 tbsp canola oil. Bring to boil, reduce heat to simmer, cover leaving a crack in the lid. Stir and add water as needed. Cook until done. Some folks add a potato to thicken the beans. If cooked properly and stirred often the beans will thicken nicely. Beans always taste better when they are reheated.

Sort through the beans removing any that look severely shrivelled or black, also you'll find what look like small rocks, these are actually little clumps of dirt (wet one and it will dissolve) remove those too.
I rinse the beans about three times and then cover in a pot with water. General consensus is that it is best to let the beans soak and swell overnight. BUT, If you don't have time...You can bring them to a boil and then cut off the heat and let them soak for one hour as a substitute.
To cook the beans. The water should be at least one inch over the top of the beans. (My Grandmother and Aunt always used the water they had soaked in, thought the beans turned out more flavorful) Bring to a boil and then turn down heat to simmer. Add either a piece of Fatback or Salt Pork or (My personal preference) some Bacon Grease. Also add salt and pepper (Go fairly lightly on the salt, you can always adjust once the beans are tender enough to taste test). Usual cooking time varies, can be as short as three hours or as long as six (I think this has to do with the age of the dried beans). Check periodically to make sure you don't need to add more water to keep the beans covered (At this point you will want the liquid to barely cover the beans to that the liquid doesn't end up being to thin)
Now a question for you. You're not from around here, right?

I agree with Grandpa. I'd cook them in a crock pot after soaking. Oh, here's a tip. Put a table spoon of peanut butter in them while cooking. That will take the "gas" out of them.
