Pinto bean pie
1 cup cooked pinto beans, mashed with a little of the cooking liquid
1 1/3 cups coconut (small can)
1 cup chopped pecans
4 eggs
3 cups granulated sugar
1 tbsp vanilla
2 sticks melted butter or margarine
3 unbaked 9" pie shells
Preparation:
Mix all ingredients together and pour into pie shells.
Bake for 1 hour in a 300° oven.
Makes three 9-inch pies.

My husband has a different version. He fills a casserole dish @ half-way full with pinto beans (leftover from a batch cooked in a crock-pot). He covers the beans with a package of jalepeno cornbread mix (make dough as package instructs and cover the beans with the uncooked dough). Cook per cornbread packet instructions. Done when the bread is done!

1-cup of canned or soaked and cooked pinto beans,mashed. 1 cup coconut 1 cup pecans 3 cups sugar , 4 eggs beaten, and 1 cup margerine, melted Combine akk ingredients; beat well and pour into 2 unbaked pie shells, Bake in a 300 degree oven for about 1 hour. When I made this I couldn't believe how good it was. Liz
