Pineapple Casserole

Thank you Jason. I am creating a recipe disc and was wanting this same recipe. I have had it before - only once - and it is absolutely yum-yum. Can't wait to make it.

I've had this before and you're right, it does sound nasty reading the recipe but once it's prepared it is actually quite good. Although be warned, IT IS RICH! "A little dab'll do ya!"

It's getting to be spring, and this is my favorite spring dessert! I originally posted this back in 2006 and everyone seemed to love it, so I thought I might resurrect it :D

When you read the ingredients, this will sound absolutely horrible, but I promise that you'll like it. If you don't, just bring the leftovers to my house!

Ingredients

2 Cans Pineapple Tidbits - partial drained
1 Cup Sugar
6 Tbs Flour
2 Cups grated cheddar cheese (mild or sharp)
1-2 stacks Ritz crackers crushed (I prefer 2, but opinions vary)
1 Stick Butter - Melted (1 stick =/2 Cup)

Directions

Mix the pineapple, sugar, flour, and cheese together, and pour into a casserole dish. Set aside. In a bowl, mix the Ritz crackers and butter together. Stir until completely moistened, adding more butter if necessary. Spoon the cracker mixture on top of the pineapple mixture.

Bake at 350 for 30 minutes.

Best served warm. Will make about 10 servings.
