Pickling

River, I just consulted with an experienced pickler and she asked, "Did you rinse the cucumbers really good after you let them sit in the salt."

Uh, duh...since the recipe told me only to drain them, I didn't have sense enough to figure I should probably rinse them, as well! Live and learn.

And, maybe, the person who wrote those recipes likes a lot more salt than I do.

In any case, just picked a big bucket of cucumbers and will give it another try.

You are right, that is way too much salt for 8 cups of cukes. 1 T should be enough for 8 cups.

No, I'm not making them with a mix. I am using pickling salt and then adding the other herbs, ingredients. The flavor is good, just too salty for my taste. The bread and butter recipe called for a fourth of a cup of pickling salt and the dill recipe called for 3 tablespoons. That seems a lot for 8 cups of sliced cucumbers.

I make all kinds of pickles and never had a salt problem. Are you making them with a mix??

This past week, I've made my first pickles. Bread and butter and dill. One thing I've already learned is that the recipes call for more salt than is needed (and yes, I am using the amount of cucumbers the recipe calls for). Has anyone else had this experience? Any tips you'd like to share? I mean, I wanted to make pickles, not pickle chips!!!
