I use regular cider vinegar and beet juice, equal amount. I also add some pickling spice to give it more flavor and keep the eggs refrigerated for several days so the juice sets in and gives the eggs a nice deep purple color. It is a good idea to also stir the eggs every now and then so they get evenly colored.

I give my left over beet juice to a friend and he uses 1/2 beet juice and 1/2 vinegar and pours over the eggs.

How To Make Pickled Eggs:
1. Get some chickens...any old chickens will do just fine. 2. Coax the chickens into laying some eggs. (A rooster costume will hurry this step along.) 3. Gather the eggs, being careful not to break any. If a few get cracked anyway, you can set them aside for an omelete. That's another recipe. 4. It's best to cook with kitchen wine. Boil the eggs in water; meanwhile, start drinking the kitchen wine. 5. The eggs will be ready in a few glasses....I mean minutes. 6. Cool the eggs. You should continue using the kitchen wine during this. (I might sound a little "hard-boiled," but if you follow the recipe, it will be "over easy.") 7. Peel the eggs. Prepare to put them into the picking jar, but don't put them all in one basket. 8. Using the kitchen wine as needed, place the eggs in a glass jar. 9. Fill the glass jar to cover the eggs with white vinegar and enough beet juice until it's your favorite shade of pink. Continue to marinate in kitchen wine. 10. Refrigerate the jar of eggs. In a couple of eggs, your days will be perfectly pickled and ready to eat.

I may be doing it wrong, but I always buy a large can of beets then pour the beet juice over my boiled eggs. I throw away the beets since I don't like them. I add vinegar if I wan't a little more pizazz to the "pickleness". :)

Been wanting to pickle some eggs and have never done it. How do you do it?

Mr. Dad: When you make deviled eggs, add beet juice to the vinegar to give them that nice pink color and a bit more flavor. Just use some of the juice from a can of beets...pickled or plain. You'll have deviled eggs no one can yoke about!

When I make pickling eggs after about a week they start turning a brown ugly collor does anybody no why . Could it be I use regular vinegar instead of white vinegar .
