hdgirl, i've pickled with penrose juice before, tried adding beet juice to it but it didn;t taste right

I love them purple eggs. My Mother would always fix them for Easter but I have never fixed any. I wish I had some picked eggs now.

We pickle our eggs in leftover pickled sausage juice. We buy a big jar of penrose or hannah's pickled sausage and when those are gone we put our eggs in it. They are good and the juice is usually good for at least two batches.

I'm craving some pickled eggs now, sounds like a goood recipe satan. Beet juice is the only way to go. I used to eat canned beets all the time when I was younger, wouldnt mind having a jar right now.

if you want them really sour ... do all that naked ... they will get scared and that increases the pucker power

My husband makes the best pickeled eggs, using beet juice, we always use a gal jar - he dose it by tatste but here goes: for around 3 doz eggs in a Gal. jar add vinegar a little less than a quart - 1 cup of water - add beet juice say from a pint jar of sweet pickeled beets and aprox 1 cup sugar, stir well taste ( u want it sweet but super tangy) if not real tangy from Vinegar add a little more - add eggs if this amount dosen't cover eggs well add alittle more vinegar + sugar to taste until eggs are well covered. The Eggs will absorb alot of the vinegar so mix and taste until it is good to you. The eggs are ready to eat in 2 days, leave out at room temp. Good luck and lets us know if you try this and how they turn out

boil a quart of cider vinegar and a cup of beet juice ( a little salt, red pepper ,sugar ,garlic if ya want)and let it cool ..boil the eggs (peel them if you want)let them cool put them in a jar fill with the pickling liquid , put a lid on them and put them in the fridge for at least 2-3 days before eating
