Pickled Brussells Sprouts

I've found a wonderful way to fix Brussells Sprouts! They are my favorite green vegetable any way but this is different.

If you buy ice box pickles like Claussens or Vlassic dills you've got one of the three ingredients. When you finish the pickles, add one bag of cooked brussells sprouts. I cook mine for 10-11 minutes in boiling water and 1 tbsp olive oil. Drain the sprouts and add to the vinegar brine mixture that the ice box pickles were in. Cool, place back into the pickle jar, and leave overnight in the refrigerator. Wow! Delicious!

You can also cook carrots, cauliflower, or broccoli and add it to the vinegar (not with the brussells sprouts) and have a wonderful treat.

I use the brine twice. The second time, I add 1/4 cup of apple cider vinegar to replace the brine lost the first time. Not quite as tasty, but worth the trouble.
