Pickled beets
Boil beets until done-approximately 30 minutes.
3 quarts of beets (about 24 small)
2 cups sugar
2 sticks cinnamon
1 Tablespoon whole cloves
a few whole allspice
1 1/2 teaspoons salt
3 1/2 cups white vinegar
1 1/2 cups water
Put cloves, cinnamon and allspice in a cheese cloth sack so it can be pulled out later. Put all but beets in a pot and simmer 15 minutes. Pack beets into jars. Pull out cheese cloth sack. Pour solution over and seal. Process pints or quarts 30 minutes in a water bath.
You can use apple cider vinegar but it dulls the color. Makes approximately 6 pints.
