ok here s my fail safe method first put eggs in pan and cover with water just right above the level of the eggs now bring to boil set timer for 9 mins and 30 seconds if no timer watch clock. in the meantime prepare a large boil with water and alot of ice as soon as it is time drop in the ice bath this is to halt the cooking process let sit in ice bath to chill for 5 mins it hardens the gooy stuff and your shells will come of in pieces and your yolks will be a perfect golden yellow with no runny

ADD SALT TO YOUR WATER. RIGHT WHEN YOU PUT EGGS IN POT. THE SHELLS WILL COME OFF EASY.

I always get two dozen eggs and immediately put one dozen in fridge. The other dozen i put on a shelf and let sit. Fresh eggs will keep up to 30 days if they have not been refrideratered sp? When I get down to about 6 eggs I put the next dozen in the fridge. after they have been in fridge for at least a week boil as usual and then cool in sink with cold water. After a few minutes just roll the egg up the side of the sink very easy and kinda crush the shell. Then peel.

it never fails if you add salt to the water and wait till the water is boiling before you put the eggs in . i use a large spoon to drop the eggs in one by one.

to chop my eggs I put them in a small round bowl and chop them with my kraut/cabbage chopper

Martha Stewart showed me the trick! After boiling eggs cool quickly by running cold water over them. Lay the egg flat and roll with the palm of your hand, pressing slightly so the shell cracks all over. Don't press too hard or you will squash them. After you crack the shells they pull of easily. You crush the shells, but not the membranes insides. You can also hold them under running water if you need to. Fresh eggs never peel well. Let some age a week and they will peel better. I always add salt to my water as well.

Steaming
My preferred method of boiling eggs is to steam them. Use about 1/2 inch depth of boiling water in a pan with a close-fitting lid. The eggs rest on the bottom of the pan which reduces bumping and presumably reduces the chance of cracking. Since only a small amount of water needs to be boiled the method also saves time and energy. Steam 10 minutes turn off heat DO NOT UNCOVER for 10 more minutes.

We also get fresh eggs daily from our hens. I've been boiling ours 20 minutes instead of the usual 15 minutes.

My mother-in-law told me that fresh eggs are hard to peel as well. Another thing that seems to help me is to immediately run cold water over them.
