I like them canned or frozen, depends on what you have the time for....freezing is easier.

I think canned is better. You can eat them right from the jar or they are ready to make a pie, sonker, etc. I guess it is just what each person likes best.

You can also use lemon, orange or pineapple juice to keep them from turning brown. peaches, apples, pears, bananas.
the vitamin c or ascorbic acid keeps them from turning. Be sure to coat the fruit generously.

It's called FRUIT FRESH. Most stores carry it. Or you could just use pineapple juice instead. Works great at keeping cut fruit from turning.

Freezing by far. Fast. Drop in boiling water for about a minute, skins come right off, halve, take out stone, make slices, put in a large container. Now here's the important part. There is a product you put on the peaches to keep them from turning dark. Use that. Can't think of the name. If you don't do that, the peaches will not look very appitizing.
Add sugar if you want, put in plastic freezer bags, and stack in freezer.
I just smelled a whiff of fresh peaches. Love that smell.
