Peach Cobbler Receipe Ingredients 1 1/4 C Flour 1 C White Sugar 4 tsp salt 1/2 C Lt Brown Sugar 1/2 tsp Cinnamon 1/2 C Butter or Margarine 4 C sliced fresh peaches 1 Tbsp Lemon Juice 1 tsp Lemon Peel
Preheat Oven to 350 deg
Combine 1 cup flour, 1/2 cup sugar, salt and cinnamon. Cut in butter w/2 knives or pastry cutter until course. Resembles corn meal.
Combine peaches, lemon juice, lemon peel, 1 C sugar and 1/4 C flour. Spoon into greased 9-inch square dish. Sprinkle flour mixture over peaches. Bake covered for 15 minutes. Remove cover and bake 35 to 45 minutes longer.
Yield: 8 servings
Also, there's a really simple receipe using peach mixture as described above, but substitute the 1 C of flour by stirring in 1 1/4 C bisquick mixed with water to consistency of pancake batter. You stir this into peach mixture and the pie bakes its own crust. (I like to add 1/4 tsp almond flavoring and 1/2 tsp vanilla to mixture).
This works well with canned, drained peaches, apples, blackberries, blueberries, cherries. over
