Pea Salad

I must agree with Bushman, re: canned peas --- unless LeSeuer peas. The secret with them is to wash thoroughly in a collander under cold water. A great addition is a heaping tsp of good sour cream and a little butter (or margarine). Heat peas (and mixture, if you choose) in microwave with plastic wrap over top of bowl--don't forget to pierce the plastic. I heat mine for 90 seconds, stir well and serve.

Pea Salad
2 cups of canned peas, drained, or thawed frozen peas
3 to 4 tablespoons finely minced onion
3 or 4 tablespoons mayonnaise
1 to 2 teaspoons sugar
2 tablespoons milk
1/4 to 1/2 cup grated Cheddar or Cheddar in tiny cubes

Thawed frozen peas will taste better than the canned peas,

but then almost anything tastes better than canned peas.
You do not need to cook the frozen peas; they will taste better if you don't.

Believe me.
Mix sugar and milk into the mayonnaise.
Stir in the minced onion, thereby permeating the mayonnaise with those delicious onion juices.
Mix the mayonnaise with the peas, stir in the cheese, and serve.

Layer lettuce on bottom of pie dish.
Cover with mayonnaise. Add onions, if desired.
Then add a can of peas, drained.
Top with shredded cheddar cheese.

My wife makes great pea salad. I know she uses Lesur baby peas, pimentoes, boiled eggs, onion, mayo, salt & pepper, etc. She refrigerates it overnight.

Wondering if any of you have a good Pea Salad recipe? I was thinking about making one for Thanksgiving. Trying to think of something new to make.
