I use 3 cans of peas. Salt, pepper, sugar to taste, a teaspoon of celery seed, small diced onion, 3 chopped boiled eggs, a large cucumber chopped and mix it all with a large scoop of mayo. This is my main requested dish for all functions.

This is Paula Dean's recipe....

* 1 (15-ounce) can very young early peas (recommended: Lesueur)
* 1/4 cup chopped onions
* 2 boiled eggs, crumbled
* Salt and freshly ground pepper
* 2 to 3 tablespoons mayonnaise
* Chopped pimento, optional

Directions

In a colander, rinse and drain peas very well. Place drained peas in a medium bowl. Add the onions, crumbled eggs, and mayonnaise, tossing to combine and coat peas. Season to taste with salt and pepper. Add pimento, if using. This recipe is easily doubled or tripled.

Mayo and sugar to taste
About 2 Tlb parmesan cheese

Some people put shredded lettuce and shredded cheddar cheese in theirs but I don't.
