Jalapeño Roll-Ups 8 Oz. Cream Cheese 1 Can Green Chiles (or) 2 To 3 Jalapeños -- finely chopped 10 Large Soft Tortillas 1/2 C. Sour Cream 2 T. Taco Or Picante Sauce
In a bowl combine cream cheese, sour cream, peppers and taco sauce until blended. Lay a tortilla out flat and spread a thin layer of cream cheese mixture on it. Then, tightly roll up tortilla (like a jelly roll). Wrap in Saran wrap and refrigerate from 24 hours to 4 days. Repeat with remaining tortillas. After refrigeration, unwrap rolls and slice in about 1/4 " thick slices. Serve on a platter with parsley or Boston lettuce and can be served with salsa for dipping. This recipe makes about 80-100 slices
Walking Taco
2 lbs. hamburger 2 packets taco seasoning 1 can tomato soup 1 head lettuce, shredded 2 tomatoes, diced 1 lb. shredded cheddar cheese 1 lb. sour cream 1 bottle taco sauce or salsa 10 single serving bags of Frito corn chips or Dorito chips
Brown hamburger; drain grease. Combine meat and taco seasoning and prepare according to package directions. Stir in tomato soup and heat well. Place in a wide mouth thermos. Put lettuce and tomatoes each in plastic containers. When ready to eat: open top of a single serving chip bag. Slightly squeeze bag to crush chips. Place a desired amount of taco meat and toppings on crushed chips in bag. Eat with a fork.

1. Go to Lowes and buy a couple of boxes of Hebrew National beef c*cktail weiners in a basket. Prepare according to directions, Very quick and quite good.
2. Buy some frozen, cooked meat balls (Armour) and grape jelly. Put jelly and meat balls, along with a little BBQ sauce in a crock pot. Get hot all way through. Serve, using colorful, long toothpicks. Plastic, colorful ones will look nice.
3. Get a couple of cans Rotel Chili w/tomatoes and a 1 lb block of Velveeta cheese. Melt cheese and stir the Rotel into it. Hold at a warm temp until ready to serve. Serve with white tostada restaurant style corn chips (the low sodium, if you can find them.)
4. Fresh pineapple chunks.
5. A good citrus based fruit punch with lime sherbet floating in it.
6. A tray of nuts.
7. A tray of assorted crudites, i.e., celery, carrots, broccoli, radish, cauliflower, strawberries, grapes.
Vary amounts according to number of guests and appropriate to age group.
Use disposable table cloths, napkins, cups, cutlery.
8. Have fun and this way, you will be able to enjoy your guests.

What are some good but relatively cheap options for a party? We are having a graduation party-non alcholoic- and need some good dinner options to feed a large crowd. Any suggestions?
