Oyster Fritters oil or shortening for deep frying 2 eggs, slightly beaten 1 cup milk 2 cups flour, sifted before measuring 2 teaspoons baking powder 1/2 teaspoon salt 1 1/2 cups drained and chopped oysters Heat oil in a deep heavy skillet or deep fryer to 370°. Mix eggs, milk, flour, baking powder, and salt. Stir oysters into this batter and drop by tablespoonfuls into the deep hot fat. Fry in batches so oil will not become too cool. Turn fritters as they cook, so all sides will be golden brown. Drain on paper towels. Serves 4. Serve with c*cktail sauce recipe below
Cocktail Sauce Combine catsup, chili sauce, lemon juice, horseradish, celery, green onion, Worcestershire sauce and chili pepper; refrigerate.

For 4 people. 1 large can of oysters. 1 quart of milk. 1 quart of water. 1 stick of butter. salt / pepper to tasted
In large pot combine milk, water, melted butter, salt and pepper. Add oysters. Let cook for 30 min. on low to med heat. It mades a great soup/serve with saltine cracker.
