Usually in the deli section, they have these things called "Pitetes." You know, I may not have spelled that correctly, but you get the idea. You could try making mini pizzas on them. They come in whole wheat and white, and are pretty healthy. Plus, a bag of those, a can of pizza sauce, and a bag of cheese and pepperoni would last a couple days.
Another great idea (I think) is making pocket sandwiches. Use canned biscuits and roll out the dough. Fill them with cheese and meat (or sauce and pizza stuff if you want), fold them, seal the edges, and bake until golden. They are also great filled with fruit. You could bake up a whole can Sunday night (half sandwich, half dessert if you wanted), and have two or three days lunch made out already.
I have plenty other ideas, but I feel like I'm typing too much for one post! 8)

Sometimes just fixing a sandwich on a different type of bread helps .. a pita or a croissant. If she has a good thermos, you can heat soup for her in the morning and it will usually stay pretty warm until lunch. I pack lunch for my husband a lot and he tells me pizza is good cold, but it's not very healthy for a kid's lunch I guess.

If she likes tuna, Star Kist has a lunch to go ready-made pack. Includes tuna, crackers, packets of pickle relish and mayo with a spoon, napkin and a mint!
