OLD FASHIONED POATATO SALAD

I just cook my potatoes and drain them. Add the milk & butter, mash them just like I'm making mashed potatoes, then I add : boiled eggs(sliced, or chunks), Chopped tomatoes,onions, and some dill relish. My whole family loves it made this way!

We had potato salad one year instead of the tradional mashed potatoes. It didn't go over too well because nobody could figure out where to put their gravy...

Correction.

the drained and reserved liquid applies to the pickle juice. Not the onions. Got on the wrong line while typing.

Ingredients

8 large potatoes, peeled, rinsed, and cubed (about 1/2" cubes)
1 cup Dukes mayonnaise
8 hard-boiled eggs, chopped
1 cup diced, sweet onions, drained and reserve liquid (optional)
2 tablespoons mustard
1 cups diced celery (some people like celery seed instead. I don't.)
1/2 cup diced sweet pepper
1/2 cup, more or less, Mt. Olive diced sweet pickles
2 tsp salt (adjust to your taste)
1/2 tsp pepper, optional (adjust to your taste)
1/3 cup sliced olives with pimentos (optional)

Directions

Peel and dice potatoes into bite-sized pieces. (1/2" to 3/4" pieces) Boil until done but still firm. Drain and let cool.

Mix all other ingredients into potatoes (use a large pan or bowl. Don't overstir to point of mashing the potatoes.

Adjust mayonnaise, mustard and spices to taste. Refrigerate for 30 minutes. The salt will release more salt from the pickles and mustard, so if you are not careful the mixture will become too thin. If more liquid is required then add, by tbsp, the reserved pickle juice.

Refrigerate until cool and serve.

Some people like to add crumbled bacon to the mixture but I find that the bacon in leftovers becomes soggy.

MY FAMILY LOVES MY POTATOE SALAD. 3BOILED EGGS (SAVE ONE BOILED EGG TO SLICE AND PUT ON TOP) 4 TO 5 STEWED POTATOES . COOK POTATOES. DRAIN AND CRUCH IN BOILED EGGS. DICED ONION, ABOUT 1/2 OF AN ONION. 1 TABLESPOON OF MAYO (DUKE'S MAYO) 2 TEASPOONS OF MUSTARD. STIR THEM IN. ADD CHOPPED PICKLES, OR YOU CAN USE THE DUKE'S MAY WITH PICKLES IN IT. STIR IN ABOUT 1/3 CUP OF PICKLE JUICE. TASTE IT WHILE YOU ARE ADDING ALL THE INGREDIENTS. YOU'LL KNOW WHEN IT SUITS YOUR TASTE. ADD SALT AS YOU STIR.
