I steamed a large bnls, sknls chicken breast on the grill today, let it cool, and rough cut it into bite-sized pieces. Then tore enough lettuce for two good sized salads, grated a carrot into this, diced half a Vidalia and one large, tender, fresh cucumber. Served garden fresh tomatoes tossed with fresh sweet basil. Tossed well, sprinkled 1/4 cup good Feta cheese over top, added croutons, and presto!!! Salads ready for chicken to be added, fresh dressing to be drizzled, and tall tumblers of Luzianne tea. Fresh peeled pear and cantaloupe for dessert. SSSoooo quick, cool, filling, and good!

If you cook them and then take all the chicken off the bone if they have bone and then put some bullseye bbq sause on them its like bbq and put it on buns for a sandwich easy and good....or if they are boneless get you some italian dressing and let them sit in it for a couple of hours and put them on the grill good.

Why don't you post your message in the Recipe section--not this one?

Stir Fry. If the kids are old enough, let them help chop veggies.

Boneless? My favorite is Chicken Parmesan. Fairly simple. Dip boneless breasts in egg, coat with bread crumbs (I prefer unseasoned, but some people like seasoned crumbs). You say you don't want fried but I didn't know if you meant style or any fried recipe. But cook in olive oil until golden brown. Line bottom of corning wear with tomato sauce (I like to make my own, but you can use your favorite). Top with Mozzarella cheese, bake covered at 350 for 20-30 minutes.

Catchatori is good too.

Cut the chicken into cubes or strips. Cut up veggies that you like and stir fry (high heat) the chicken in a little oil and then add the veggies and cook until crisp-tender. Add soy sauce, brown sugar (just a little) and hot pepper or pepper sauce to your taste. Stir well. Serve with rice or noodles.

My family loves this recipe:

Herbed Parmesan Chicken Breasts
Boneless skinless chicken breasts (4-5)
1/2 cup shredded Parmesan cheese
1 tsp dries basil
1/2 tsp minced garlic
1/2 tsp dried oregano
1/4 cup butter, melted

Heat oven to 400. Combine cheese, herbs, and garlic in pie pan or shallow dish. Place melted butter in another dish. Dip chicken in butter, coat thoroughly in herb/cheese mixture.
Place chicken in un-greased 8 or 9-inch square baking pan. Bake for 17-22 minutes or until no longer pink. Serve with favorite side dish, enjoy!

I was bored with chicken one night and came up with this. Family loved it, real creamy and full of different cheeses. You could substitute monteray jack cheese also, did it that way one night. You could also split the chicken breast 3/4 of the way through, stuff with deli ham slices and swiss cheese, roll in egg wash and bread crumbs and bake or fry. Add a hollandaise sauce to top and it's really good. Good luck.

Chicken and Penne

1 1/2 lbs chicken tenderloins, cut into bite sized pieces
1 lb. penne pasta
1 small can sliced mushrooms, drained
1 small onion, chopped
1/2 cup grated Parmesan cheese
1/2 cup grated Asiago cheese
1/2 shredded Italian blend cheese
1/2 - 3/4 pint of heavy cream
1/2 bag frozen broccoli florets or frozen asparagus

In medium sized saucepot, bring 5 cups of water to boil and add penne pasta with 2 tablespoons of salt. In a medium sized skillet, add 3 tablespoons olive oil and 2 teaspoons butter. Add onion and cut up chicken and cook, turning chicken until done. (If adding asparagus, chop into 1 inch pieces and add to chicken and onion mixture when chicken is half done.) If using broccoli florets, add to pasta and cook for 2 - 3 minutes just before pasta is done. Drain pasta when done and return to saucepot. Add cheeses and half of heavy cream. Mix well forming sauce. Add chicken and vegetable if used, sliced mushrooms and mix well. Add enough of the remaining heavy cream to create a loose sauce. Serve topped with chopped parsley or basil.
