No Bake Cookies

Been away from my receipes for a few days. Here are some.

Bourbon Balls (no bakes)
1 cup powdered sugar
2-1/3 tbsp cocoa
3 tbsp light syrup (Karo)
3 cups vanilla wafers, crushed fine
1 cup pecans or walnuts, chop fine
1/2 cup bourbon or rum
powdered sugar, for rolling the finished cookies

Place wafers and nuts in food processor and pulse until crumbly. Add remaining ingredients. Pulse until smooth. Roll balls about 1 inch in diameter. Roll in powdered sugar. Chill.
(mixture is sticky gooey so dust your hands with sugar while shaping cookies. Make in cool kitchen when not so humid.
24 balls. Stores well. Can freeze.

Cornflake cookies.
1 cup white Karo syrup
1 cup granulated sugar
1 cup peanut butter. (crunchy or smooth)
5-1/2 cups corn flakes (sweetened, shredded coconut, to taste, is a good addition.)

combine corn syrup and sugar in a large sauce pan. bring to a boil. Remove from stove. Add peanut butter and stir well. Add corn flakes. Stir until corn flakes are covered with syrup mixture. Drop by tablespoons on waxed paper, stick-free foil, parchment paper, or pam sprayed cookie sheet.

Don't try to make in an overhot, humid kitchen. They - and all no bake cookies will set better.

Mock Reese's Chocolate Peanut Butter Fudge With Frosting

1-1/2 Cups semi-sweet chocolate chips
1-1/2 cups peanut butter chips or milk chocolate morsels.
1 14 ounce can sweetened condensed milk
2 tsp vanilla extract.
1/3 cup sifted 10X powdered sugar. Sift.
1/8 tsp salt

Frosting
1/2 cups smooth peanut butter
5 tbsp margarine. Room temperature
1-1/4 cups sifted 10X powdered sugar
2 tbsp milk or condensed milk

Topping
1/2 cup penut butter chips or real milk chocolate chips. (You can mix these by using 1/4 cup peanut butter chips and 1/4 cup milk chocolate chips)

Fudge:
Spray 8x8 pan with Pam. Set aside.
Melt, in a large microwave safe bowl, chocolate chips or peanut butter chips (about 90 seconds, depending on your wattage)
Stir melted chips and add sweetened condensed milk. Stir and microwave for additional 30 seconds.
Add vanilla, stir until smooth, then add powdered sugar and salt.
Pour into prepared pan.

Frosting:
Beat together peanut butter and margarine with electric mixer. Add sugar and beat until smooth.
Add milk and continue beating until you get a thick frosting. Add more powdered sugar if too thin.
Spread over fudge. Add extra peanut butter chips on top. refrigerate until firm. (Usually about 2 to 2-1/2 hours.)
Yield is 36 pieces. Very rich.

Orange cookies
4 cups gingersnap or graham cracker crumbs.
1 cup powdered sugar
1/3 frozen orange juice concentrate, thawed
1/4 cup white Karo syrup
1/4 cup margarine or butter, melted.
1 cup finely chopped nuts

Mix all ingredients in large bowl. Shape into 1 inch balls when well-blended. Expect about 60 cookies.

No Bake P nut Butter Cookies
INGREDIENTS
2 cups white sugar
1/4 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup margarine
1 teaspoon vanilla extract
1 pinch salt
1/2 cup chunky peanut butter
3 cups quick cooking oats
DIRECTIONS
In a saucepan over medium heat,
combine the sugar, cocoa, milk
and margarine. Bring to a boil, stirring occasionally. Boil
for 1 minute, then remove from heat and stir in the vanilla,
salt, peanut butter and oats.
Drop by rounded spoonfuls onto waxed paper. Allow cookies to
cool for at least 1 hour. Store in an airtight container

Peanut Butter Dandies
These are simple and fun to make.
1/2 c. honey
1/2 c. peanut butter
3/4 c. powdered milk
3/4 c. rice crispes or coco crispes.
1. Mix all of the ingredients together until well-blended.
2. Shape as desired. Be creative! Shapes, letters of the
alphabet, etc.
3. Stir in additional treats for variation: minced
dates, nuts, coconut (watch for allergies), etc.

How about the peanut butter schoo recipe. the one white gave had chocolate. The school peanut butter fudge I ate had no chocolate.

which one are you looking for. There are several. One made with oatmeal, chocolate, etc. One is a peanutbutter school cookie made with peanut butter, sugar, and vanilla. There are several other ones, i.e., Martha Washington peanut pralines, etc. Let us know what you want and we will come through for you. Whitehawk.
