Fresh Tomato Salsa
Ingredients:
12 Red Tomatoes, chopped
6 medium onions, finely chopped
3 medium green Bell or Sweet pepper, finely chopped
One 12 oz. jar pickled jalapeno pepper, Drained and diced
6 T. Sugar
2 t. salt
6 T. Vegetable Oil
6 T. Lemon juice
6 T. Cider Vinegar
2-3 garlic cloves, finely minced
3 T. Dried Cilantro leaves
Three 15 oz. cans tomato sauce ( or two cans of sauce and one 12 oz. can of paste for extra thickness)
3 t. dried oregano leaves
Mix all ingredients together and chill to blend flavors.
The volume is about one gallon.
I use a food processor to grind the onions, peppers, and jalapeno peppers. I also use bought minced garlic. I use two cans of tomato sauce and 1 of tomato paste.

I have made some salsa this year and it turned out awesome.
I dont know exactly how many lbs of tomatoes we used, but I think that I used about 30 or so lbs. I used a blender to "chop" up the tomatoes when I made the salsa because I like the salsa really thick but not really chuncky. Then we added around 1-2 diced green peppers, 7-8 chopped cayenne peppers, 1 teaspoon of black and red pepper spice mix, oregano, basil, salt, garlic powder to taste. I cooked it all day on lower settings, one batch cooked overnight just to get to the thickness that I wanted.
It turned out really good, and quite spicy (Kids think it is too spicy, I think it is just right!)

This is the one I use....simple and very good. You can make it as hot as you want! Hope you enjoy!!
SALSA
5 GAL BUCKET OF TOMATOES (PEELED) 3 BIG CHOPPED ONIONS 3 GREEN BELL PEPPERS 15 JALAPENO PEPPERS (OR MORE IF WANTED) 1 CUP OF VINAGAR ½ CUP OF BLACK PEPPER ½ CUP OF SALT GARLIC POWER TO TASTE Texas Pete to taste 1 bundle of fresh cilantro (chopped)
Cook for 4 hours or until thickness desired and put into jars. If needed you can mix some cornstarch and tomato juice together for thickener.
