Need recipe for Mexican Cornbread

I stopped putting oil in the skillet. I put my old well seasoned skillet in the oven when I turn it on at 450 degrees and let it preheat with the oven. I have the batter ready when the preheater goes off and I take the skillet out and spray a little Pam into the skillet and it works good and the bread never sticks. I then turn heat up to 475 to cook the bread.

im going to try the mexcan fried cornbread it sure sounds good.a pot of beans with it would'nt be bad, sounds good doesing it?

You can also do it in the oven, like dinker said "put oil in the skillet"

The recipe NaturalMan posted is a good recipe. It works well in the oven. I always use an iron skillet for my cornbread. Mix the ingredients, add a couple T. of oil to skillet and get the oil good and hot. Add the cornbread mix and put in the 459 degree oven for 25 minutes or so, or until done. I like to get mine pretty brown on top so that the crust is crunchy. In the recipe, you and replace the regular milk with buttermilk. I prefer to use buttermilk in my cornbread. You can also add a chopped jalapeno pepper to it, but reduce the amount of crushed red pepper if you do. Remember when chopping a jalapeno pepper to use a pair of disposable gloves and always wash your hands well. Nothing any worse than getting jalapeno pepper in your eyes. I once knew a lady that rubbed her eyes after cutting a jalapeno pepper and she went through a few days of recovery from it.

MEXICAN FRIED CORNBREAD
Mix your favorite cornbread recipe. Below is a recipe which can be used with good results.
2 cups cornmeal 1 1/2 cups milk 1 egg 1/4 cup of oil
add:
1 cup shredded Cheddar cheese 1 small onion, diced 2 tablespoons crushed red pepper 3 tablespoons sugar
Combine all these ingredients in a mixing bowl.
Add a small amount of oil to a skillet (I use an iron skillet).
Cook over medium to medium high heat on the stove. Drop large spoonfuls into the skillet, as you would pancakes, but smaller. Cook until both sides are brown, turning once.
