If his mom is still alive I would ask her for all her recipes. He would love that.

Potato Salad 3 pounds russet potatoes 1 ¼ cup mayonnaise ½ cup sour cream (Optional) 1 tablespoon mustard 1 tablespoon vinegar or pickle juice. 1 teaspoon salt 1 teaspoon sugar ½ teaspoon pepper ½ cup chopped celery fine ½ cup chopped red or white onion ,fine 5 hard-boiled eggs, finely chopped ¼ cup pickle relish or cut up pickles Peel potatoes and coarsely chop. Combine the potatoes with enough water to cover in large saucepan. Bring to a boil. Boil until tender but not mushy; drain. Combine mayonnaise, sour cream, mustard, vinegar, salt, sugar and pepper in a bowl and mix well. Stir in celery, onion. Fold in potatoes, eggs and pickle relish. Serve warm or Chill, covered, until serving time. The flavor is enhanced if chilled overnight. Garnish with paprika. Old Timey Beans 1 pound pinto beans 1 small ham hocks, (4" long) 1 small strip ham fat (if hock is lean) water, to cover by 1 inch 1/2 teaspoon crushed dried red pepper(Optional) 1 teaspoon salt 1/2 small onion chopped fine (Optional but taste great) Place all ingredients in a large crock pot and bring to a boil, covered, and cook for 4 or more hours. Check after 2 hours and add more water if needed. I like to have a lot of soup in the beans for the cornbread. Remove the ham hock and break up the ham into small pieces; add to beans. Serves with cornbread and chopped onions.

Hopefull Bushman will be on soon. He has lived in this area all his life and is one of the better cooks in Wilkes. I'm sure he will post a couple for you.

My husband's Mom is from the North Wilkesboro area, and no one can cook like she can--including me! Now we live in another state and he really misses her cooking. I want to surprise him by making some of the things he misses most: pinto beans, warm potato salad, and banana pudding. Can anyone send me a recipe for one or more of these. Thanks. I'd be thrilled!
