Add a little water, cover back up and stick it back in at about 275-300ish for a while longer. See if that helps. Can't hurt if it's tough anyway. Could also be the cut of meat you used.

You can always grind it down into beef spread for sandwiches

Reynolds cooking bags make a perfect roast.. $2-3 at the grocery store. Bake at 30 degrees like the box says and you will love the roast and your hubby will be pleased too. :D

Thanks everyone. I just checked it with a meat thermometer and it was 160 degrees in the middle but it felt really tough. I have it covered so I dont know why it is tough. Oh well, practice makes perfect I guess.

The longer and the lower temp you cook it on, the more tender it will turn out... I like mine to shred almost. I always add my potatoes, carrots, onions and mushrooms when I put the roast in also...gives them and the roast good flavor. Also, I don't love those plastic cooking bags...they used to sell foil ones that I liked better, but I can't find them around here, so I just foil my pan tightly. Works just as well... Good luck! We're having roast tonight also..

I have an digital alarm thermometer


It is a wonderful thing. I set a temperature, It has a magnet on the back and the cord to the probe is fireproof and slips through the door of the oven, or grill. When it hits that temp, it alarms. It is great for chicken, beef or pork. No guessing and always done perfectly.

Mtnview has the right idea, check the temp in the center (140-160) if you do not have a thermometer, push a thin knife in the center and remove after 1 min and check to see if it is hott or cold and if the juice is clear. I like to cook mine on lower heat and it comes out juicy. When I was a cook at Hardees we cooked roast at 250 degrees 4-5 hours until it was 140 degrees in the center.
Save some for the rest of us, we are hungry too :P

What time will it be done? and put a fan on the east side of your house to blow the smell west. If you don't carphartt will intrude up on you.

My suggestion will not help much for this roast, but keep it in mind for next time. On the spice isle at the supermarket are seasoning packs that have a baking bag with them. You can get them for chicken, pork chops, roasts, ect. They are great! Very simple and very tasty. You already have the correct seasonings and using the baking bag will help insure the meat stays juicy and tender.

I would have waited until the roast was 3/4 done before adding the vegetables. Either way, as long as you have enough liquid in the pan the taste shoud be good.

cook it at 350 for 2 - 2 half hours . most of the time its like 30 minutes to the pound.after 2 hours look at it if you think it needs more time let it cook 30 more minutes. it should be done watch your oven it may cook hotter or colder. once its out cover and let stand 30 minutes and you will love it.

No its not in a cooking bag. Just in a pan with tin foil covering it. BTW, its beef. Thanks for any tips. Mtnview, its been in for an hour and a half now. Im trying to not overcook it lol

If it's beef, a four pound roast should cook for about 2 hours on 350...

It's best to do it in a bag, or you can put it in a 9 x 13 pan and tightly foil it.

Beef or Pork? Beef is about 20 minutes per pound for medium rare, longer if you want it more medium, pork is about 15 minutes per pound, internal temperature approximately 160º - 165º. When you have vegetables added, like potatoes, carrots, onions and celery, you need to add an additional 5 - 10 minutes per pound, considering the size of the cuts you made. I always add at least 3 - 4 cups of water to ensure that there will be enough liquid that mixes with the juices of the meat to make a brown pan gravy to pour over the meat/vegetables on the plate. How long should I cook a 4 lb. roast? I put it in the oven with fresh vegetables and is covered. I just dont want it to be real tough and dry. I am cooking it at 375 degrees. Any help would be appreciated, I am new at this. Thanks.
