I use almost the same recipe as Cary but I use a large bag of Broccoli Florets and put them in a 9 x 13 baking pan, (disposable works great), I slice the Velveeta and layer it on top of the broccoli (uncooked broccoli) completely covering the broccoli ( My family likes it cheesy). I then take my Ritz crackers ( I usually use a whole box) and crush them up to a semi fine consistency, mix them with enough melted butter to make them stick together and then put that on top of the cheese. I bake it covered loosely with tinfoil on about 350 - 400* for about 30- 45 min. This a great church dish or reunion dish.

To make any of these recipe's into a main course for dinner, just add 3-4 boneless/skinless chicken breasts that have been cooked and cut up into chunks about 1" X 1", and cokk along with the rest of the dish.

Great for winter time also.

Now this one is really different. I like the sound of it. I thought it always had rice in it. I will try this one this weekend.

I want a very simple recipe for broccoli casserole. The one I used off Campbell's soup was not the one I had used previously and I hated it. A patient's mother had given me a recipe that used Velveeta cheese but I cannot find it again.
