CHEWEY MOLASSES COOKIES


1 c. Crisco
1 c. sugar
2 eggs
1 c. molasses
4 c. flour
2 tsp. soda
1 tsp. cinnamon
1/2 tsp. ground cloves
2 tsp. ginger
1 tsp. salt


Cream Crisco and sugar together in a large bowl, add eggs. Put the soda in the cup of molasses. Mix until there are no lumps. Add to the mixture. Add salt and the spices. Mix the flour, one cup at a time and mix well. Chill for 1 hour, roll dough about the size of a walnut. Have 1 cup of sugar, roll the balls in the sugar. Put on greased cookie sheet about 1 inch apart. Press flat with a small glass dipped in the sugar. Bake in oven at 325 degrees for 12 minutes, or until the bottom edge is beginning to brown. These cookies will not look done. Use a cake turner to take the cookies out of the pan. Put on a cake rack to cool. Wait a few minutes before you store them; this way they won't stick together.

BRAN MOLASSES MUFFINS


1 c. 100% Bran
1 c. milk
1/4 c. molasses
1 egg, beaten
1/4 tsp. soda
1 c. sifted flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1/4 c. melted shortening


Combine bran and milk; let stand 5 minutes. Add molasses and egg. Sift together dry ingredients. Add to bran mixture. Quickly stir in melted shortening. Fill greased muffin pans two-thirds full and bake at 375 degrees for 25 minutes.

MOLASSES COOKIES


3/4 c. soft shortening
1 c. sugar
1 egg
1/4 c. molasses
2 c. flour
1/2 tsp. salt
2 tsp. baking soda
1/2 tsp. cloves or allspice
1/2 tsp. ginger
1 tsp. cinnamon


Cream shortening, sugar, and egg. Mix in molasses and beat. Mix in 1 cup of the flour with seasonings and pisces. Mix well. Add remaining cup of flour. Form small round balls, roll in sugar. Place on lightly greased cookie sheet. Keep dough chilled when not using. Bake at 350 degrees for 10-15 minutes.

NOTE: Watch CLOSELY as the cookies bake quickly and burn easily.

1880'S MOLASSES CAKE


1/2 c. shortening
2 eggs
1/4 tsp. ginger
1/4 tsp. allspice
1/4 tsp. cinnamon
3 c. flour
1 c. sugar
1 c. dark molasses
1 tsp. baking soda dissolved in 1 c. strong hot coffee


Bake at 350 degrees for 30 to 40 minutes. Cream sugar with shortening, add eggs, molasses, spices and flour. Mix thoroughly, add coffee with soda dissolved. Pour into greased pan. Test with toothpick in center, dry if cake done. Frost with a white butter frosting.

My great-gram was famous for this cake. We still enjoy it at family gatherings.

COLONIAL MOLASSES GINGER SNAPS


3/4 c. shortening
1 c. sugar
1/4 c. molasses
1 egg
2 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cloves
1 tsp. cinnamon
1 tsp. ginger


Mix together at 1 time all the ingredients. Form into balls. Roll in sugar. Place on slightly greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. For a chewy cookie, bake the minimum time; for a crisp cookie bake for the maximum time.

Makes 3 to 4 dozen.

Southern Barbecue Sauce
1 can (8 ounces) tomato sauce
1/3 cup molasses
1/4 cup vinegar
1 clove garlic, minced
1 teaspoon chili powder
1/2 teaspoon ground black pepper
dash salt
Combine all ingredients in saucepan. Bring to a boil, reduce heat, and simmer for 10 minutes. Makes about 1 cup of barbecue sauce

Baked Beans
12 oz bacon;cut bacon in half and pull pieces apart, then pile in a 2 1/2 qt. casserole dish;cover and microwave for 4 min.; remove from microwave and stir.; put back and repeat this 4 min at a time until bacon is done;place a metal colander in a square baking pan and pour bacon from casserole dish into colander draining grease into pan; place drained bacon on paper towels and pour grease into glass jar from the corner of the pan;save grease in fridge for use in breakfast gravy or pintos, etc.; after bacon cools put in a ziploc bag and put in fridge until beans are baked.

Put 1/2 lb. ground beef in same casserole dish and microwave for a few minutes at a time, stirring in between until cooked;drain in colander in the sink and rinse with hot water to remove more fat; you may want to pour some dish soap down the drian and flush with more hot water after you remove colander from sink. Return beef to casserole dish; preheat oven to 375.

Add to beef, a couple cans of drained porknbeans, 2 T mustard, 1/4 cup brown sugar,1/3 cup molasses, chopped onion, 1/2 cup honey bbq sauce, and black pepper. Mix well.

Bake uncovered for about an hour; take ziploc bag with bacon and break up bacon thru the bag with hands; pour bacon on top of beans and press down into hot beans with a spoon.

Gingerbread
2 1/2 c plain flour
1/2 t salt
1 1/2 t soda
2 1/2 t ginger
1 c molasses
1/2 c sugar
1/2 c butter or shortnening
1 egg
1 c HOT water
melt butter or shortnening;combine dry ingredients;add egg, molasses and butter to dry ing.;add hot water;beat until smooth
bake 13x9x2 in or 2 9x9 in pans 350 degrees 40-45 min.
