This is one of my Husband's favorite cakes

Mississippi Mud Cake
(A very rich cake)

2 cups of white granulated sugar
1 1/2 cups of butter or margarine, softened
1 1/3 cups of flaked coconut
4 eggs
2/3 cup of unsweetened cocoa powder
1 1/2 cups of chopped pecans
1 1/2 cups of all-purpose(plain) flour
1 teaspoon of baking powder
2 teaspoons vanilla extract
12 ounces of marshmallow creme
3 3/4 cups of confectioners' sugar
4 teaspoons evaporated milk

directions:
1. Preheat oven to 350', spray wiith Baker's Joy a 13x9 baking pan ( I use glass)
2. Cream together 1/3 cup of cocoa, white granulated sugar and 1 cup of the butter or margarine until light and fluffly, add eggs and 1 teaspoon of vanilla and mix well.
3. in a separate bowl - Mix flour, baking powder, coconut, and chopped pecans together. Stir flour mixture into the EGG mixture, and stir until blended. Pour batter into the baking dish.
4. Bake at 350' for 40 to 50 minutes. Smooth marshmallow creme over top of cake while still hot. Let cake cool completely then ice with chocolate icing.
5. Chocolate Icing: Mix together confectioner's sugar, the remaining 1/3 cup cocoa, 1 teaspoon vanilla and 1/2 cup of butter or margarine. Continue to mix and add enough evaporated milk (approx 4 teaspoons) to make icing spreadable on cake.
