I made this today for dinner at Church and didn't have any leftovers. I thought I would share this recipe with you.

Happygift's Mexican Lasagna

3 lbs ground beef
2 tomatoes, finely chopped
1 medium onion, finely chopped
2 cloves garlic, crushed
1 packet taco seasoning mix
1/2 cup water
1 (16 oz) sour cream
12 oz. mozzerella cheese or mexican blend cheese
1 (28 oz) can Italian tomatoes
1 to 2 cans green chilies
Salt to taste
Black pepper to taste
Flour Tortillas

Brown meat, 1/2 of onion, tomatoes and 1/2 of garlic, after meat is brown; add taco seasoning packet and 1/2 cup water put aside.

In blender, blend can of tomatoes, 1/2 of onion and 1/2 of garlic, salt and black pepper. Blend well together.

Add meat mixture and tomato mixture to a pot and cook sauce until it thickens.

In a 8x12 pyrex dish or baking pan, put a layer of tortillas on the bottom and including the sides. Add some meat and tomato sauce mixture, on top of that add 1/2 of green chilies. Repeat layer 1 more time. Pour sour cream on top of the sauce mixture. Put cheese on top of sour cream and for color add green chilies on the top.

Preheat oven to 350 degrees. Cover Lasagna with foil and put in the oven until hot. Let stand 5 minutes before serving.

*Note this is enough to make 2 8x12 pans of mexican lasagna.
