MEXICAN CHOCOLATE DRINK
1 1/2 oz. unsweetened chocolate 1/4 c. sugar 1-2 tbsp. instant coffee 1/2 tsp. ground cinnamon Dash of salt 3/4 c. water 2 c. milk Whipped cream Cinnamon sticks for garnish & stirring (optional)
Heat chocolate, sugar, coffee, cinnamon, salt and water in 1 1/2 quart saucepan over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Heat to boiling; reduce heat. Simmer uncovered, stirring constantly 4 minutes.
Stir in milk, heat through. Just before serving, beat with hand beater until foamy. Top with whipped cream. Place cinnamon stick in cup for garnish (and yummy smell).

LUAQUEDA (Mexican Drink)
3 c. milk 3 bananas (very ripe) 1 can frozen concentrate tropical fruit juice
Or 2 1/2 to 3 cups fresh fruit such as strawberries, raspberries, mangos or passion fruit...
Put all ingredients in mixer. Mix until smooth. Serve cool. 6-8 servings.

MEXICAN DESSERT (FLAN)
3/4 c. sugar (may use 1 cup) 3 eggs 3 egg yolks 1 1/2 tsp. vanilla 3 oz. pkg. cream cheese 1 (14 oz.) can condensed milk 1 (12 oz.) can evaporated milk
Caramelize sugar; pour into pie dish and swirl onto sides and all over bottom. Mix all other ingredients together in food processor; do not over whip or mix. Add liquid to dish and place over hot water bath. Bake at 350 degrees on middle rack for 60 minutes. Remove from oven and water bath; allow to cool then refrigerate. Invert to serve. Bueno.

MEXICAN DESSERT PUFFS
2 c. sifted flour 2 tsp. baking powder 1 tsp. salt 2 tbsp. shortening 1/2 c. water Oil for deep frying
Sift together the dry ingredients and mix well. Add shortening and water and set aside, covered, for 1 hour. Make about 20 small balls and roll the dough 1/8-inch or 1/4-inch thick on a lightly floured board.
Cut into small triangles, diamonds or square shapes with a sharp knife. Heat oil to 400-425 degrees. Deep fry shapes until they are brown on both sides; remove and drain. Dip in syrup (either recipe below) and place on a dessert plate to serve. SYRUP #1: 3/4 c. water 1 c. sugar 1 cinnamon stick 1 slice lemon
Combine, bring to boil in a saucepan and boil 10 minutes.
SYRUP #2: 1 c. sugar 1/2 c. water 2 1/2 tsp. honey
Boil sugar and water together about 10 minutes to make a medium syrup. Add honey, blend and heat for 5 more minutes.

MEXICAN DESSERT
1 1/2 c. brown sugar, packed 1 tsp. cinnamon 1 1/2 c. water 5 c. French bread cubes 1 1/2 c. raisins 1 1/2 c. peanuts 1 c. diced sharp cheddar cheese
Combine sugar, cinnamon and water. Boil gently until sugars dissolved. Pour hot syrup over bread cubes and toss lightly. Add raisins, peanuts and cheese. Toss until blended. Spoon into 2 1/2 quart greased casserole. Bake at 375 degrees for 15 minutes. Serve warm with whipped cream, if desired.
