i use 3/4 can of spanish rice, ground chuck, 1 egg and 1slice of chunked up bread, mix well form into loaf. the spanish rice provides the tomato and green peppers and also helps hold it together, u can add one pkg of lipton onion soup mix if so desired.

My kids hate onions so I use onion powder in lots of things.

Easy Meat loaf

2 pounds of Hamburger
1 - 16 oz Can of Tomates sauce
3/4 pack of crackers

Mix it up and Bake it

Make your reguler meatloaf and use onion powder instead of onions
or use shallots (sold in supermarket) they are a real mild onion..

Sorry, make that 1 1/2 tsp. salt on that recipe!

The key is to chop the onions so fine that he doesn't notice they are there. I don't like onions either, but I still use them in my meatloaf.

Here is a great meatloaf recipe. Even people who don't typically like meatloaf like this:


Mix together and set aside:
1/2 c ketchup
1/2 c brown sugar

Mix together:

1 1/2 lbs lean ground beef (I buy the leanest I can)

some very finely chopped onion...I use very little, maybe like a quarter of a small onion. It gives it the flavor it needs but it isn't noticeable.

2 eggs

1/4 tsp. pepper

1 tsp. salt

1/4 tsp. ground ginger

3/4 c milk

3/4 c crushed saltine crackers (you might end up needing a little more...you don't want it to be too gooey)

Mix these ingredients very well.

Take a small casserole dish and lightly grease it.
Take half of your ketchup/sugar mixture and line the bottom of the pan
Then put your meatloaf mixture on top and smooth it to fit the pan
Then add a little more of the ketchup/sugar glaze on top.

Bake uncovered at 350 for one hour.

Does anyone have a recipe for a meatloaf the doesn't use onions
and still taste good...boyfriend claims he hates them but loves meatloaf.
