This is the best meatloaf recipe I have ever tried. Even people who don't like meatloaf typically like this.
Mix together 1/2 c ketchup and 1/2 c brown sugar. Set aside.
Mix in large bowl:
1 1/2 lbs. extra lean ground beef 3/4 c milk 2 eggs 1 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. ground ginger 3/4 c. crushed saltine crackers Chopped onion to your preference (I use half of a small onion)
Lightly grease a casserole dish (I spray mine with pam) Put half of the ketchup/brown sugar mix in the bottom of the pan Spread meatloaf on top Cover with remaining sugar/ketchup
Bake uncovered for 1 hour at 350.

OMG!!!
I have NEVER thought about using Stovetop Stuffing in a meatloaf. I suppose the simplicity escaped me.
This is on my weekend list of things to do.

For the topping, use ketchup with some brown sugar and a little dry mustard mixed in. Its alot better than just plain ketchup.

Has anyone tried raisins in their meatloaf ? You need to it's great and adds a flavor that can't be described. Just use your regular recipe and add 1/2 cup of raisins to it.
Also : The meatloaf will taste better if you use regular hamburger the extra fat adds lots of flavor, just bake so grease drains off (not good for heart healthy diet) Try mixing ground chicken ,turkey or pork in your mix.

ground round, as much as you want. I usually use 2 lbs. 1 med jar of salsa, it has all the other ingredients, like onion, pepper, tomatoes and all the spices, use whatever heat in the salsa that you prefer. bread crumbs about a cup. 2 eggs for 2 lbs. of meat. I like to put in about a tblsp of mustard to give it that extra flavor. then across the top I will lay bacon across the loaf and cover it with ketcup. bake at 350 about an hour.
