I make mine similar to cowgurlbootsnall. With the exception since I hardly ever have half & half on hand, I use evaporated milk, undiluted.

Tater Cakes (Very Good)


2 c. cold mashed potatoes
1 egg, slightly beaten
1/4 c. butter
1/2 c. flour for dredging
Salt & pepper to taste
1 sm. onion (optional)

Mix the potatoes, onion and egg together and form into 4 fat patties or 6 lean patties. Heat the butter in a skillet, dredge the patties in flour and saute until golden on one side. Flip and cook until the other side is golden brown, making sure the pancakes are heated thoroughly and the onion is soft.

Peel your potatoes and add to a pot of salted water. Boil until soft. Drain. Add butter and milk (or half & half). I usu. start with a couple scoops of butter w/ my wooden spoon and eyeball the milk. I use an electric hand-held mixer to "mash" them because I like them smooth and creamy. You can add milk if you see you need more while you're mixing (but not too much or they will be soupy). I add salt and pepper to taste. They're not hard, but you will get better with practice!

I like to use red potatoes or a combo of red & white, and I always use some half and half even if I'm mainly using milk...just makes them rich and creamy.
